Roast Sweet Potatoes

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Cut sweet potatoes into ½-inch-thick wedges. Toss on a baking sheet with a large drizzle of oil, salt, and pepper. Roast on top rack until tender and slightly crispy, 25-30 minutes.

• Meanwhile, trim and mince scallions, separating whites from greens. Peel ginger and grate using a zester or the small holes of a box grater until you have ¾ tsp (1½ tsp for 4 servings). Peel and mince or grate garlic.

Make Aioli

• In a small bowl, combine mayonnaise, scallion greens, ¾ tsp soy sauce, ¼ tsp grated ginger, ¼ tsp sugar, and a pinch of garlic (use 1½ tsp soy sauce, ½ tsp ginger, and ½ tsp sugar for 4 servings).

Form Patties

• In a large bowl, gently combine beef*, scallion whites, half the remaining soy sauce (all for 4 servings), remaining grated ginger, and remaining garlic. • Form into two patties (four patties for 4), each slightly wider than a burger bun.

Cook Patties & Toast Buns

• When sweet potatoes have 10 minutes left, heat a drizzle of oil in a large pan over medium-high heat. Add patties and cook to desired doneness, 3-5 minutes per side. • While burgers cook, halve and toast buns.

Finish & Serve

• Spread cut sides of buns with aioli (save some for dipping), then fill with patties, chili sauce, and crispy fried onions. • Divide burgers and sweet potato wedges between plates. Serve with remaining aioli on the side for dipping.

Ground Beef is fully cooked when internal temperature reaches 160°.

This recipe was delicious, did not take long, and easy to make. I appreciated the sweet potato alternative to regular fries. Also, I am a big fan of the ginger scallion aioli sauce and sweet sauce with crispy onions on the burger were a nice touch.

This burger was fantastic! The sweet Thai chili sauce and the crispy onions made this burger! I never have a burger without cheese but I'm telling you this one doesn't need any! My 16 year old couldn't stop saying YUM! While he was eating it. A recipe worth trying

The ginger scallion aioli that we spread on the burgers was outstanding! The crispy onions added a nice crunch with mild onion flavor. And the sweet potato wedges were healthy AND delicious. I'd like to learn how to make them a little crispier.

The aioli and chili sauce combo made this an absolute flavor bomb. The sweet potatoes were also a welcome addition, I wish they could be swapped in for regular potatoes with other meals. The burgers had a hard time binding though, possibly too much soy sauce? The were good but very messy as they fell apart pretty easily.

I've never used beef in my Thai recipes mostly because beef is so expensive in Thailand that it's rarely used. Also, there's that mayo again which I'm not all that fond of. However, this played out to be my most favorite Hello Fresh recipe ever. The beef, the crispy onions, the aioli spread, and the sweet chili sauce made for one sweet combination. I also appreciate that real potato buns were provided.

The combination of the Ginger aïoli and the sweet chili sauce on these burgers was so good. I also loved pairing it with the sweet potatoes. I hope they offer this meal choice again.

Super tasty. I added black pepper to the aioli. And I added Jack cheese to the burger. But the crispy onions and Thai chili sauce was delicious

I absolutely loved these burgers! The aioli sauce was tasty. My daughter LOVED the sweet potato too! She's 6 months and I cooked them a little extra so they'd be softer for her and she ate 3 of the little wedges!!! I couldn't believe it!
