• Place tortelloni and ½ cup water (1 cup for 4 servings) in a large, microwave-safe bowl. Cover tightly with plastic wrap and microwave for 3-5 minutes (5-8 minutes for 4 servings) until pasta is tender. (No microwave? No problem! Bring a large pot of salted water to a boil. Once boiling, add tortelloni to pot. Reduce to a low simmer and cook until tender and floating to the top, 3-4 minutes.)
• Drain, then rinse with cold water until cooled. Shake off excess water; pat dry with paper towels.
• While pasta cooks, wash and dry produce. Halve tomatoes. Quarter cucumber lengthwise; slice crosswise into ½-inch pieces. Trim and thinly slice scallions.
• Once tortelloni are dry, return to large bowl. Stir in dressing, tomatoes, cucumber, scallions, and half the feta (add more feta if desired). Taste and season with salt and pepper if desired.
• Divide salad between bowls and serve.
Flavor was excellent. I over cooked the tortelloni in the microwave so they were not pleasant but I could tell from my taste of the dish that, absent that mistake, I would have loved it. Recommend either NOT messing with the produce while the pasta cooks or cooking it on stove top where you can more easily keep an eye on it.
The meal was a nice and quick dish, easily split in two. The tortellini didn't cook as well in the microwave as explained (the inside were too hard, the outside a little overcooked), if I try this again I'll boil the pasta. Needed a salty addition (kalamata olives or bacon maybe?) to round out the flavors.
I microwaved the tortellini & it was difficult to assess whether it was all cooked properly. When we ate about half the tortellini were just right. The other half should have cooked longer. Very delicious when tortellini was cooked to tenderness. I would recommend eliminating the microwave option. Microwaving was hit and miss & our results were very inconsistent.

We loved this easy salad so much we've made it lots with small changes. I've even been asked for the recipe.
The cucumber for this meal was half wilted, I could bend it almost in half. This is not the quality I would pay for in the grocery store. I expect for you all do start doing better. These meals are expensive, I expect the vegetables to be fresh and nutritious.
Portions were generous because the tortellini is quite filling! I could have made three meals out of it.
The tortelloni was too large, and/or the texture didn't jibe, for the rest. But, the taste was great.
Was a weird combination. With tomatoes, cucumbers, and feta, the caesar dressing seemed a bit odd. It tasted ok, but would have been better with a more greek dressing. Not as creamy as with the cheese filling, feta, and caesar dressing.
Was a big hit and definitely will get again. Used it as a side for cheeseburgers for a dinner and had to leave out the feta because husband is not a fan of feta.
