Our secret? The ultimate weeknight meatball hack: pre-cooked turkey meatballs, which we toss in an herby tomato sauce, then layer onto garlic-butter-toasted baguettes with melty mozz. Make Sauce

• Adjust rack to middle position and preheat oven to 450 degrees. Wash and dry produce. • Peel and mince or grate garlic. • Heat a drizzle of olive oil in a large pan over medium high heat. Add half the garlic; cook, stirring, until fragrant, 30 seconds. • Stir in tomato paste and half the Italian Seasoning (all for 4 servings). Cook, stirring, until combined. • Add meatballs*, ½ tsp sugar, salt, pepper, and ½ cup water. (For 4, use 1 tsp sugar and 1 cup water.) Cook, stirring, until sauce is slightly thickened and meatballs are warmed through, 1-2 minutes. • Stir in 1 TBSP butter (2 TBSP for 4) and turn off heat.

• In a small microwave-safe bowl, combine 2 TBSP butter (4 TBSP for 4 servings) and remaining garlic; season with salt and pepper. Microwave until butter is just softened, 10-15 seconds. • Slice baguettes lengthwise, stopping before you get all the way through; spread cut sides with garlic butter. Place cut sides up on a baking sheet. • Toast on middle rack of oven until lightly browned, 2-3 minutes. • Carefully fill toasted baguettes with meatballs and sauce, then sprinkle with mozzarella. • Return to middle rack until cheese melts, 2-3 minutes more.

• Meanwhile, in a medium bowl, toss mixed greens with Italian dressing until evenly coated. Season with salt and pepper to taste.
