
It’s tough to resist the saucy, tender texture and tangy flavor of pulled pork. Here, it stars in sandwiches that come together in just 15 minutes. For this lightning-speed meal, you’ll mix your slaw, warm your pulled pork with a bulgogi-flavored sauce, and pile it all onto toasted brioche buns. Just think: you’re that much closer to sandwich bliss.

• Preheat oven to 400 degrees. (TIP: If you have a toaster oven, feel free to skip preheating—you’ll use it to toast the buns in step 3.) Wash and dry all produce. • Trim and halve cucumber lengthwise; slice crosswise into ¼-inch-thick half-moons. • In a medium bowl, toss together cucumber, cabbage, vinegar, 1½ tsp sugar (3 tsp for 4 servings), and a big pinch of salt. Set aside to pickle, stirring occasionally, until ready to serve.

• Tear pulled pork* into smaller pieces if necessary. • Heat a drizzle of oil in a medium pan over medium heat. Add pork and cook, stirring, until warmed through, 2-3 minutes. • Stir in bulgogi sauce and ¼ cup water (1⁄3 cup for 4 servings). Bring to a boil, then reduce heat to low. Simmer until saucy, 1-2 minutes.

• Meanwhile, in a small bowl, combine mayonnaise with Sriracha to taste. Season with salt and pepper to taste. • Place 1 TBSP butter (2 TBSP for 4 servings) in a separate small microwave-safe bowl. Microwave until melted, 30-40 seconds. • Halve buns. Brush melted butter onto cut sides. • Place cut sides up directly on oven rack (or in a toaster oven) and toast until golden brown, 3-5 minutes.

• Divide buns between plates; spread Sriracha mayo onto cut sides of top buns. Fill buns with pork and a bit of slaw. Serve with remaining slaw on the side.
Bulgogi has become one of my favorite sauces thanks to Hello Fresh. Sweet and tasty. The pulled pork was easy to work with. Quick meal and light.
My favorite recipe!! The pickled vegetables were perfect and the bulgogi meat was super fun. Sauce was a tiny bit too sweet for me (wish there was a way to control/request sauces that aren't sugary) but otherwise this was awesome.
This pulled pork with pickled cucumbers and cabbage was a hit! The sriracha Mayo was the perfect touch to balance the flavor.
I didn't realize that Bulgogi really made this sandwich more of a Korean BBQ flavor, but it was AMAZING! A bit different from traditional American BBQ, which made these a standout meal!
I think this recipe has been the best we've tried with the pre-cooked pulled pork. The carnitas and al pastor were underwhelming, but the simmer with the BBQ sauce helped the flavor fully saturate. The cabbage added much needed crunch, the pork is still very soft. GREAT, please bring this one back. We thought the cabbage wasn't worth eating on the side just on its own though, we subbed in a different side salad.
The pork and coleslaw were each delicious and together they are even better! The sriracha mayo brought a nice bonus to the flavor. It was easy to cook and clean and the portion size was perfect!
The Pickled slaw was my favorite of this dish. The pulled pork was a little salty to me but my family loved it. I would order it again
This meal was so yummy! I didn't eat the bun, put the pulled pork on top of the veggie slaw, it was great!
The portion was extremely small on this meal. We had to make another side dish for dinner. Also, the flavor of the pork filling was nice, but WAY too salty. The bulgogi sauce is nice by itself, but when combined with the already salted pork, the salt content was just out of control. This needs either an unsalted pork or a salt-free bulgogi to make it work.
The quick pickle of the slaw adds the perfect amount of acid to balance the sweetness of the Bulgogi sauce. One of our favorites!
