On the side is our whole grain blend (with rice, bulgur, and barley), a fresh tomato salad, and a big dollop of guacamole. A drizzle of cooling lime crema over the salmon is the perfect finish to this 15-minute winner dinner.

• Wash and dry produce. • Cut tomatoes into half-moons. Zest and quarter lime. Roughly chop cilantro. • In a small bowl, mix tomatoes, juice from one lime wedge (two wedges for 4), a pinch of salt, pepper, and as much cilantro as you like. Set aside, tossing occasionally, until ready to serve.

• Pat salmon* dry; season all over with Fajita Spice Blend, salt, and pepper. • Drizzle oil in a hot large pan. Cook salmon, skin sides down, until skin is crisp, 5-7 minutes. Flip; cook until cooked through, 1-2 minutes more. Transfer to a plate to rest. TIP: While salmon cooks, move to Step 3!

• Massage grain blend in package to break up grains; partially open package. Microwave until warmed through, 90 seconds. TIP: Microwave times may vary. Be careful when handling and opening the pouch. • Fluff grains with a fork and add juice from one lime wedge (two wedges for 4), salt, and pepper. Stir to combine. • In a second small bowl, combine sour cream and as much lime zest as you like. Add water 1 tsp at a time until mixture reaches a drizzling consistency.

• Serve salmon with tomato salad, grain blend, and guacamole. Drizzle salmon with crema. Serve with any remaining lime wedges on the side.
Salmon is fully cooked when internal temperature reaches 145°.
I love salmon so, this was an easy choice. The tomato salad and guacamole provided lots of fresh flavor and texture. The grain mix was a nice change from rice and that crispy skin on the salmon is my favorite! Very easy to prepare!
Amazing, first time ordering this meal. Loved that is was quick to prepare and minimal clean up. Using spicy ingredients on the salmon went so well with the guacamole and rice. Will definitely order this meal again.
Absolutely delicious and high quality salmon! We would not have thought to prepare it this way. We added Brussels sprouts and zucchini to our bowls and it was tasty and filling!
Easiest meal yet!! The Roma tomato mix was so good, I will definitely make that again. The salmon came out great and was pleased that it still had the skin on it for cooking needs.
So easy, and healthy. Very yummy seasoning on the salmon. I did throw the salmon in the oven for a few minutes at 375 versus just cooking on the stovetop
I would've liked more guacamole and bigger salmon portions, but this meal is great! Light and filling. I personally didn't eat much of the rice specifically for my diet.

It's wrong of me to want summer tomatoes in the middle of winter, but the pale pink tomatoes were hard to eat--and the "grain bowl" was wild rice. I was hoping for quinoa, farro, something other than rice. My error...but the flavors seemed bland. Salmon was excellent, though! Loved the drizzle!
I love how easy the recipes are to follow. I'm not a fan of tomato so i didnt like that part, however, my kids loved the taste of the tomato and they dont like them either. The salmon was delicious! The rice, i am not used to eating that kind of rice so i didnt really care for it. But if i could add more to give the rice a better flavor, i could eat it. Overall, i loved how healthy the meal was. I actually would order this again and maybe add more to the recipe as far as spices.
