• Wash and dry produce.

• Quarter lemon. Halve, core, and thinly slice apple. Toast sourdough.

• In a medium bowl, combine ricotta, crème fraîche, half the garlic powder, juice from one lemon wedge, 1 TBSP olive oil, and a big pinch of salt and pepper until fluffy. (For 4 servings, use all the garlic powder, juice from two lemon wedges, and 2 TBSP olive oil.)

• In a large bowl, toss arugula, half the walnuts, and half the apple with a drizzle of olive oil and as much lemon juice as you like. Taste and season with salt and pepper.

• Divide salad and toasted sourdough between plates. Spread sourdough with as much ricotta mixture as you like. Top with remaining apple. Drizzle with hot honey and sprinkle with remaining walnuts. Serve.

Adjusted the recipe by omitting the garlic, salt and pepper. I used a local apple orchard honey that went into the ricotta mix. Made a side salad out of the arugula with a citrus lime dressing, walnuts and chopped apples. Put the sourdough in the oven for toasting with a light drizzle of olive oil. Topped the bread with ricotta mix and apples.

The apple, ricotta & hot honey toasts are soooooo good! Great choice for breakfast or a snack. I love Caesar salads but your arugula salads are better! A very easy and tasty option.

I selected this meal because it is similar to a fruit/cheese board I make but this fell short of my expectations. Just not enough flavour and the dressing did not balance out the bitterness of the arugula. The hot honey was a terrific addition but there was not enough to go around which diminished the impact. The garlic ricotta spread did not compliment the apples. As I was eating it my thought was a sweet or fruity ricotta spread and a dressing made with additional hot honey could be worth a try. Also, I love walnuts... more nuts too!
