The best thing since sliced bread? Toasted bread! Though delicious on its own, carby comfort gets worlds better in the hands of our talented chefs. Sliced sourdough is toasted until golden then spread with creamy, lemon-kissed ricotta. Juicy apple and crunchy walnuts top the toasts, followed with a golden drizzle of hot honey. A tangle of peppery arugula-apple-walnut salad provides welcome contrast. Truly a toast with the most.

• Wash and dry produce.
• Quarter lemon. Halve, core, and thinly slice apple. Toast sourdough.
• In a medium bowl, combine ricotta, crème fraîche, half the garlic powder, juice from one lemon wedge, 1 TBSP olive oil, and a big pinch of salt and pepper until fluffy. (For 4 servings, use all the garlic powder, juice from two lemon wedges, and 2 TBSP olive oil.)
• In a large bowl, toss arugula, half the walnuts, and half the apple with a drizzle of olive oil and as much lemon juice as you like. Taste and season with salt and pepper.
• Divide salad and toasted sourdough between plates. Spread sourdough with as much ricotta mixture as you like. Top with remaining apple. Drizzle with hot honey and sprinkle with remaining walnuts. Serve.
These are simple but super yummy. The bright lemon flavor and cool ricotta pairs perfectly with a kick of hot honey. I made these as an appetizer on small pieces of French bread.
This was absolutely delicious. We put the arugula salad on the toasts and then topped with apples. Yum all around!
Adjusted the recipe by omitting the garlic, salt and pepper. I used a local apple orchard honey that went into the ricotta mix. Made a side salad out of the arugula with a citrus lime dressing, walnuts and chopped apples. Put the sourdough in the oven for toasting with a light drizzle of olive oil. Topped the bread with ricotta mix and apples.
The apple, ricotta & hot honey toasts are soooooo good! Great choice for breakfast or a snack. I love Caesar salads but your arugula salads are better! A very easy and tasty option.
I selected this meal because it is similar to a fruit/cheese board I make but this fell short of my expectations. Just not enough flavour and the dressing did not balance out the bitterness of the arugula. The hot honey was a terrific addition but there was not enough to go around which diminished the impact. The garlic ricotta spread did not compliment the apples. As I was eating it my thought was a sweet or fruity ricotta spread and a dressing made with additional hot honey could be worth a try. Also, I love walnuts... more nuts too!
Love the combo of Ricotta apples and honey. Arugula goes well with the ricotta too!
This is fast becoming a favorite of mine! I'm not too fond of arugula, but the toast with the hot honey on top is great!
This was an amazing refreshing summer brunch. Lots going on with snappy green apples, creamy ricotta, walnuts and arugula. Love this recipe.
This is one of my favorite breakfast meals. Toast, ricotta, apple and honey - the flavors together are amazing and such a quick make that I order it for weekday breakfasts.
Love the balance of these with creamy ricotta and crispy apple. Also tangy salad and sweet honey. Fun
