Prep & Make Aioli

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Halve, peel, and thinly slice onion; mince a few slices until you have 2 TBSP (4 TBSP for 4 servings). Cut potatoes into ½-inch-thick wedges. Halve buns. • In a small bowl, combine mayonnaise with chipotle powder to taste (start with a pinch, then taste and add more from there if desired). Season with salt and pepper; set aside.

Caramelize Onion

• Melt 1 TBSP butter in a large pan over medium heat. Add sliced onion and season with salt. Cook, stirring occasionally, until softened and lightly browned, 10-15 minutes. TIP: Lower heat and add a splash of water if onion begins to brown too quickly. • Stir in half the BBQ sauce (you’ll use the rest later); cook until sauce is warmed through, 1-2 minutes more. • Turn off heat; transfer to a medium bowl. Wash out pan.

Roast Potatoes

• While onion cooks, toss potatoes on a baking sheet with a large drizzle of oil, half the Fry Seasoning (you’ll use the rest later), salt, and pepper. • Roast on top rack until browned and tender, 20-25 minutes.

Form Patties

• While potatoes roast, in a large bowl, combine pork*, minced onion, remaining Fry Seasoning, salt (we used ½ tsp; 1 tsp for 4 servings), and pepper. • Form into two patties (four patties for 4), each slightly wider than a burger bun.

Cook & Toast

• Heat a drizzle of oil in pan used for onion over medium-high heat. Add patties and cook until browned and cooked through, 4-7 minutes per side. • In the last 1-2 minutes of cooking, top each patty with cheddar; cover pan until cheese melts. • While patties cook, toast buns until golden.

Serve

• Spread bottom buns with remaining BBQ sauce. Spread top buns with chipotle aioli. Fill buns with patties and caramelized onion. • Divide burgers between plates and serve with potato wedges on the side.

The bbq onions were so good mixed with the chipotle aioli, which was a bit spicy but it added just the right amount of kick! The fry seasoning is my favorite!! It's sooo good and I'm happy I got to use it on the wedges and in the burger meat!! Solid 10/10, would get again!

Loved this one, but changed up a bit.... I added BBQ Sauce to the Aioli and as well, to the Pork mixture for the Burger Patty's. I also Sauteed Mushrooms and added to the grilled onions. Finally, instead of the roasted Potato Wedges, I opted to make Southern Potato Salad out of the potatoes included, instead. YUMMY!

The potato wedges weren't great... The seasoning wasn't flavorful, texture was off, and burger preparation was weird. The chipotle mayo was overly smokey, and I wasn't a fan of mixing the caramelized onions with the bbq.

Overall this was very good. We didn't feel the full flavor profile was as complex as it could have been for this burger compared to other burger recipes we've received. While the aioli was spicy and smoky, that was about it. Would like to have had more spices for the wedges as well, maybe stronger garlic to pair with the sweetness of the bbq.

The pork burger was juicy and the sauces were delicious. Onions always go well on a burger. However, the potato wedges side for burgers are a little boring and there wasn't enough mayonnaise to make the aioli for two servings.

The Chipotle Aioli was a bit spicy for us but it was tasty. The addition of the BBQ sauce to the onions was delicious. I saute onions for burgers all the time, but never thought to add BBQ. Nice touch.

This was delicious and easy to prepare. The potatoes were really too small to cut them in wedges as in the pic. But the flavors were good, the bun nice and soft and the quality of the beef was excellent. Great to enjoy a homemade burger, as I've done mostly curbside pick ups over the Pandemic and it's never good by the time get it home. A winner!

Potato wedges didn't get all the way done and cooked them longer then recipe called for. The burger was very good. I'm not a big fan of the onions but still good and reheated well too.
