Serve it all family style with scallions, sour cream, and tangy-sweet BBQ sauce so everyone can choose their own toppings and dippers!

• Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄2-inch-thick wedges. Trim and thinly slice scallions, separating whites from greens; mince whites. Cut broccoli into bite-size pieces if necessary.

• Toss potatoes on a baking sheet with a large drizzle of oil, Fry Seasoning, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes.

• While potatoes roast, in a large bowl, combine beef*, scallion whites, panko, stock concentrate, 1 TBSP water, 1⁄2 tsp salt, and pepper (2 TBSP water and 1 tsp salt for 4 servings). • Form beef mixture into two 1-inch-tall loaves (four loaves for 4). Place on one side of a second baking sheet. TIP: If you added any other items to your meal (apps, sides, and/or dessert), you can get started on them now!

• Toss broccoli on opposite side of sheet from meatloaves with a drizzle of oil, salt, and pepper. Top broccoli with cheddar. • Roast on middle rack until broccoli is tender and meatloaves are cooked through, 15-20 minutes (if broccoli finishes first, carefully remove from sheet and continue roasting meatloaves). TIP: If you prefer cheesy potatoes, skip adding cheese to broccoli and instead remove potatoes from oven after 20-22 minutes; top with cheddar, then return sheet to top rack and roast until cheese melts, 2-3 minutes more.

• Meanwhile, in a small pot over medium heat, combine ketchup, BBQ sauce, brown sugar, and 2 TBSP water (4 TBSP for 4 servings). Cook, stirring occasionally, until sauce has thickened and is warmed through, 3-5 minutes.

• Transfer meatloaves to a cutting board. Slice crosswise. • Serve potatoes, meatloaves, broccoli, BBQ sauce, sour cream, and scallion greens family style for everyone to build their own plate. (Don’t forget to serve with any extra items you may have ordered to build out your meal!)
Ground Meat is fully cooked when internal temperature reaches 160°.
Delicious! Loved the sauce for the meatloaf, the meatloaves were tender, not greasy, the loaded potato wedges were fun, and the cheesy broccoli was delicious! I enjoyed making this recipe and my family loved it.
Really easy to make, and very good. This is probably one of my favorites! 1 suggestion is extra cheese and i don't remember seeing it but bacon choice for the potatoes. I am extra adding kind of person. The bbq sauce mix was great as well. And getting this on the fall time area is a comfort.
The meal tasted delicious! Very flavorful! I did add a little BBQ seasoning to the meatloaf to Amp up the flavor. The potatoes were so small we just sliced them into rounds and roasted them. I wish you could send 1 large potatoe to make the wedges with.
We like meatloaf. This one was a little more like a bland burger. Maybe the bbq should be mixed with the meat then cooked. I would also likely pour more bbq on the top to get a good carmelization. We liked the loaded potato wedges and did not add the cheese to the broccoli. On another recipe that added cheese to the broc it just hardened during roasting and burned.

I put the bbq sauce on the meatloaf while it baked and topped with the cheese in the last 5 minutes instead of the broccoli. Turned out very tasty
Used cheese on potatoes which were cut into round slices and topped with sour cream and onion greems. Wonderful ! Meat loaf with th sauce was also amazing!
The meatloaf was a great recipe when it came to seasoning. Some things myself and my spouse would have never thought to add. The sides were good as well. But definitely a great dish to try if your tired of the "family" passed down recipe for meatloaf.
We really enjoyed this meal. The sauce was so delicious on the meatloaves. I started to give three stars instead, but the meal itself was great. The broccoli had a weird texture.. I've never had broccoli taste like that.
Always loved my mother's in law meat loaf but was seriously worried of how difficult was to do it but this recipe really help me next time I will be making this for the family too
