
Sometimes, the key to creating a great dish is just combining everything you love to eat. Case in point: this tasty toast! Our chefs took the best parts of a BLT and avocado toast and combined them—with a few flavorful twists—to create the world’s greatest lunch mash-up. Toasted sourdough bread is piled with guacamole, sliced tomato and radishes, and crispy bacon for a toast as colorful as it is hearty and delicious. On the side (or atop your toast—you do you!), there’s a lemony arugula salad. Goodbye, sad lunches of the past!

Roma Tomato
3 unit
Radishes
1 unit
Lemon
2 ounce
Arugula
4 slice
Sourdough Bread
(Contains: Soy, Wheat)
1 cup
Guacamole
Salt
Pepper
Olive Oil
Heat a large, dry pan over medium-high heat. Carefully add bacon* in a single layer; cook, turning occasionally, until crispy, 6-10 minutes. (TIP: Lower heat if bacon begins to brown too quickly.) Turn off heat and transfer to a paper-towel-lined plate. Once bacon is cool enough to handle, roughly chop.
Meanwhile, wash and dry all produce. Thinly slice tomato into rounds. Trim and thinly slice radishes into rounds. Quarter lemon.
In a large bowl, toss arugula with a drizzle of olive oil and lemon juice to taste; season generously with salt and pepper.
Toast sourdough until golden brown.
Spread toast with guacamole (1 packet per slice); season with salt and pepper. Top with tomato, radishes, and bacon. Season with salt and pepper. Garnish with a bit of arugula salad if you like. Serve with remaining salad on the side.
These rock! I split these up so I have a half portion each lunch for 4 days. The arugula was so fresh and lovely. Being in Wisconsin I had to shave some parmesan cheese curls into the salad. The dressed arugula was great on the sandwich too. I love the lunch type meals because healthy lunches are always tough for me to come up with. Thanks HF!
We are still talking about how surprisingly delicious this brunch dish was. I added fried eggs to bulk it up. Wish the bacon was better sliced - one piece was all fat and another was thick like ham. Loved the simplicity of the arugula salad. Next time I'll zest a bit of the lemon on the dish.
As a Saturday lunch, the BLTR Avocado Toasts were flavorful and hit the right spot. I added the arugula to the tops of my toasts. Loved every bite. Easy to make and easy to gobble down!
I love radishes and I would have never thought to add it to avocado toast. Was superb. I do wish however that it would have given a suggested lemon juice amount to the arugula. I used the whole lemon and it was quite tart, and it probably only needed 1/2.
This was a nice, simple lunch I had at work. However, my only complaint is that the tomatoes were mealy, mushy, and I didn't get to eat them on this toast. There should've been more radishes. This was my first avocado toast and I really liked the guacamole...had a kick but not too much. The sourdough bread was excellent.
Yum! I made it into a sandwich instead of toasts, and put the dressed arugula on sandwich. Light, refreshing, tasty. Took off a star for false advertising. That is not avocado toast. That's a BLTR with guacamole. It was good. But it was guacamole, seasoned with onions and tomatoes etc.
Very tasty, and loved the unique spin on a BLT. Arugula and the sourdough put this one over the top.
I may have overcooked the bacon, but this was simple to whip up and quite tasty. The arugula salad is a nice complement. I look forward to having the second serving for breakfast tomorrow.
I thought I would try this, since everyone talks about Avocado toast. This was truly a very pleasant surprise. This was so yummy I would order this all the time. :)
Excellent. Good bacon. Didn't need as much guacamole as was sent but I'll use it up. I liked the arugula. Nice touch.
