
When it comes to comfort food, meatloaf used to sit squarely in the number one spot, followed closely by the next-day meatloaf sandwich. But this sandwich changes everything. Topped with a classic ketchup glaze, sliced meatloaf is stuffed between toasted sourdough along with caramelized onion and a horseradish Dijonnaise. With potato wedges on the side and more sauce for dipping, prepare to rave about the triumph of this long-time fave!

Adjust racks to top and middle positions and preheat oven to 425 degrees. Wash and dry produce.
Cut potatoes into ½-inch-thick wedges. Halve, peel, and thinly slice onion. Mince a few slices until you have 2 TBSP (4 TBSP for 4 servings).
Cut broccoli into bite-size pieces if necessary. (Save potatoes for another use.)

Toss potatoes on a baking sheet with a drizzle of oil, salt, and pepper.
Roast on top rack until browned and tender, 20-25 minutes.
Swap in broccoli for potatoes; 15-20 minutes.

Meanwhile, in a large bowl, gently combine beef*, panko, garlic powder, stock concentrate, minced onion, half the ketchup, salt (we used ½ tsp; 1 tsp for 4 servings), and pepper.
Form beef mixture into two 1-inch-tall loaves (four loaves for 4 servings); place on a second baking sheet. Brush tops of meatloaves with remaining ketchup.
Roast on middle rack until cooked through, 15-20 minutes.

While potatoes and meatloaves cook, heat a large drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add sliced onion and cook, stirring occasionally, until browned and softened, 8-10 minutes.
Add 1 tsp sugar (2 tsp for 4 servings) and a splash of water. Cook, adding more splashes of water as necessary, until onion is caramelized and jammy, 2-3 minutes more. Season with salt and pepper.
Turn off heat; transfer onion to a small bowl. Wipe out pan.

Heat 1 TBSP butter in same pan over medium heat. Add bread and toast until golden brown, 2-3 minutes per side (add more butter and work in batches as needed).
While bread toasts, in a second small bowl, combine horseradish sauce, mayonnaise, and half the mustard (all for 4 servings). Set aside.

Lay toasted bread out on a cutting board. Top half the bread slices with caramelized onion; spread remaining bread slices with sauce (save some for serving).
Cut each meatloaf crosswise into four slices; fan out slices over bread topped with caramelized onion. Close sandwiches and cut in half.
Divide sandwiches and potato wedges between plates. Serve with remaining sauce on the side for dipping.
This was the first thing I cooked from Hello Fresh. It was delicious! It took me forever to get everything on the plate, mostly because the bread took a long time to cook (and a lot of butter!) I hate horseradish, but the dressing on the sandwich was amazing! This was my favorite thing in the box. Thanks for a great meal!
Really hearty and feels like a nice Sunday treat. Manages to make meatloaf feel gourmet. I got broccoli as the side which I preferred because the sandwich is very rich on its own.
I added some Worcester sauce to the meatloaf to add a little more flavor. It was easy to make. Because it roasts at a high heat, you need to watch it to make sure it doesn't over cook.
"Immediate top 10!" Definitely one of the more fun meals we've had on here. Flavors are great and VERY savory. We did toss the potatoes and oven roasted broccoli with it instead, which for us provided a better contrast. More greens to cut the heavy red meat.
Delicious. I did add a squeeze of mayo to beef. Next time I would use larger onion and increase dip by half. Please have options without bread. I did throw it away and had it with lettuce.
Very good, but no need to add chicken flavor and increase salt. Ate it as a meatloaf and the dipping sauce was good.
This was a lovely sandwich, but there was too much meat. I wish I had made 3 loaves instead of 2 so I could have one left over. And I wish that when I swap out the sides, they would actually swap out the sides, not just give us the extra side. In addition to it being more expensive, the reason I swap is because I don't want the original side. Now I'm stuck with more potatoes than I can use.
Needs more horseradish. Added more ketchup, mayo, and mustard and toasted the bread with mayo and it was perfect.
Amazzzzing!! One of my favorite HF meals!!! Had to sub my own veggies in because the broccoli I was sent was rotten.
Very yummy. I changed the chicken stock for beef. It seemed a better fit. Softened the panko with about a tablespoon of water. I liked the sauce better before the mayo, next time maybe add all mustard or half the mayo.
