
No matter the weather, it’s normal to crave a big bowl of soup (i.e. the culinary equivalent of a bear hug). Enter this hearty, soul-warming rendition. It’s chock-full of goodness—that is to say spiced chicken sausage, tender chickpeas, wilted spinach, and a bevy of Italian herbs in a rich, tomatoey broth. Soup’s on!

Italian Chicken Sausage Mix

Chicken Stock Concentrate
1.5 ounce
Tomato Paste
1 tablespoon
Italian Seasoning
5 ounce
Baby Spinach
Salt
Pepper
1 teaspoon
Olive Oil

• Wash and dry produce. • Halve, peel, and finely dice onion. Drain and rinse chickpeas.

• Heat a drizzle of olive oil in a large pot over medium-high heat. Add sausage* and cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. • Add onion; cook, stirring occasionally, until softened, 4-5 minutes. • Stir in tomato paste and half the Italian Seasoning (all for 4 servings); cook, stirring, 30 seconds.

• Stir 2½ cups water (5 cups for 4 servings), stock concentrates, chickpeas, and a big pinch of salt into pot. Cover and bring to a boil, then reduce heat to medium. Simmer, covered, 7 minutes.

• Once soup has simmered, uncover pot and stir in spinach. Simmer until spinach has wilted, 2-3 minutes more. Season generously with salt and pepper to taste. • Divide soup between bowls and serve.
I have to admit, I was a little skeptical on this one since there were so few ingredients. Boy was I wrong! With super simple steps and a one pot cooking process, this was easy to prepare and packed with flavor. The soup was very filling and SO satisfying. The chicken sausage was the perfect protein and the chickpeas added a nice depth. And the spinach! What a delicious dinner.
I'm a huge fan of this meal. The Chicken sausage is flavorful and the wilted fresh spinach a perfect compliment, enriching the experience. I love that the flavors are built on Mediterranean spices, not spicy peppers. The chick peas are smooth and filling. IMO, this is comfort food that works year round. Thank you.
I hate soup but the Chicken Sausage, Spinach & Chickpea Soup was delicious. Got 2 meals (4 servings) and a lunch serving. So good, my sister-in-law's comment was "I can eat this soup for every meal".
This, and the other version of this soup containing kale instead of spinach, is my favorite dish of all. I use more than half of the Italian herb seasoning, though. The spicy sausage gives it a nice "bite" and the garbanzos make it very filling. Enough for 4 servings instead of 4!
Wonderful to prepare the night before and have cold for one meal (half) and warmed on the stove for second meal (half) the next day. It is amazing how the spinach (or kale from prior chicken sausage soup) seems too much for pot but cooks down to perfection.
This soup was so incredibly easy to make (and clean up afterward) but was also hearty and flavorful. The chicken sausage, chickpeas and spinach complimented each other perfectly. A winner!
The combination of chick peas, spinach and the seasoning was tasty. The flavorful chicken sausage added a great flavor to the mix. Very enjoyable meal in one.
So tasty! The chicken sausage adds a nice touch of spice. I added shavings of parmesean cheese and a side of warm crusty bread. A perfect hearty soup for the brisk Fall weather.
We added a can of crushed/petite diced tomatoes, a bay leaf, kale and celery seed and then the recipe was great! Before it was flat and salty, it really needed some acidic content to balance the heavy density of the chicken sausage and chickpeas.
