  • Bring a large pot of salted water to a boil. Wash and dry produce.

  • Trim scallions and cut whites into 1-inch pieces; thinly slice greens. Peel and mince or grate garlic.

  • Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add beef*; using a spatula, press into an even layer. Season with a big pinch of salt and pepper; cook, undisturbed, until browned on bottom, 2-4 minutes. TIP: If there’s excess grease in your pan, carefully pour it out.

  • Add cabbage and carrot mix and scallion whites; cook, stirring occasionally and breaking up meat into pieces, until veggies are browned and tender and beef is cooked through, 2-4 minutes.

  • Stir in stock concentrate, sweet soy glaze, and ¼ cup water (½ cup for 4 servings). Bring to a simmer; cook until thickened, 1 minute more. 

 

Cook Noodles

  • Once water is boiling, add noodles to pot. Cook until tender, 1-2 minutes. Drain and rinse thoroughly under cold water, at least 30 seconds.

Make Garlic Chili Oil

  • In a small microwave-safe bowl, combine garlic, sesame seeds, half the chili flakes1 tsp oil, and a pinch of salt (all the chili flakes and 2 tsp oil for 4 servings)(Use fewer chili flakes if you prefer less heat.)
  • Cover tightly with plastic wrap; microwave until fragrant, 30 seconds.
Toss Noodles

  • Transfer drained noodles to pan with beef mixture; toss until thoroughly coated. Taste and season with salt and pepper if desired.

Serve

  • Divide beef ramen noodles between bowls; drizzle with garlic chili oil and sprinkle with scallion greens. Serve.

I would take out speedy from the name. I was watching the microwave, frying pan, pot of boiling water at the same time. Then juggling washing the noodles while still trying to watch the time for the beef... I needed several timers. It was yummy and will buy again, but the only thing speedy in this recipe was me juggling.

It was good. I don't think the ground beef needs to be prepared the way the directions said because it was tough to break up after the veggies were added. I used very little of the dried crushed peppers as I don't like really spicy stuff. The sesame seeds were still pretty crunchy. Maybe add some Chinese crunchy noodles as a topping.

The chili sesame oil needed a little more oil than just a 1/2tsp I thought, because it wasn't able to be drizzled on top. I ended up adding half into the pan and then adding just a splash more oil to the rest to put on top. It was DELICIOUS!! We loved this one so much and will be adding to future boxes!! Favorite meal I've had in awhile. We made white rice to go with and we have happy belly's!!

This was great. I really enjoyed the sesame chili oil drizzled over the noodles. This would have been better with thinly sliced pork or diced chicken. Overall, we really enjoyed this quick meal.

I always have a hard time mixing ramen noodles into the rest of the ingredients. They get kind of gloppy even when rinsed with cold water as instructed. Tasted good though!

We had plenty of food with this meal. I added beef stock and corn the next day to make ramen soup. Both meal and leftovers were delicious.

Very tasty meal, but it is hilarious to me that you skimped on the ramen noodles of all things. It should probably have twice as much per serving.

It turned out a little too oily (probably didn't drain the meat well enough) and while directions said to only use half the chili flakes I think it needed all of them. The garlic chili oil didn't have much pop. Maybe sesame oil.

I was expecting brothy ramen and this was just ramen noodles, which is my bad for not fully reading the description. Very tasty and quick meal to throw together.
