The dill cucumbers were excellent in this. This is one of the better chickpea bowls!! Very tasty, super filling, nutritious, easy to cook.. all around win!
Kicked this up a notch by roasting chick peas for 10 mins, adding the almonds and gave them another 5 minutes at 450. This was really great.

Tasted great. Would have enjoyed a little better ratio of fresh veg to the rice, more cucumber or some arugula to give it texture. But the creamy hummus was BOMB!
The food was fine but I think the instructions had some issues: either something changed or someone didn't read through the instructions and try the recipe. For one, it said to prepare the grains by the package instructions but the package didn't have instructions on it. I've gotten a meal with the same grain mixture before and either the package used to have instructions or they used to be in the recipe because I remember not having an issue. Second, I feel like some of the information was weird. It said to salt and pepper the cucumber without chopping but that seemed to be messy instead of putting it in the bowl with other ingredients first. It also didn't say to rinse the chickpeas first, which it usually does, but says to dry it with paper towels which would be weird with the canned liquid on it. I wonder if this was AI generated?
Instructions were missing how to microwave grain blend. Card read, "microwave grains according to instructions on the package." The package was only printed with the ingredients. Other grain bowl recipes include instructions on the card.
Love the easy prep for so much delicious flavor. Would love Halloumi cheese as an add in!
It was unnecessary to microwave the grains. I had to cool them before adding to the salad so the cucumbers didn't get cooked & mushy.
Really good flavor - too many Chickpeas - needed red pepper
Good but could have used something like capers or kalamata olives.
