Here’s a simple, delicious plant-based meal that will surely become a lunchtime staple. Why? It just takes a few minutes to throw together, and it’s got all the flavors and textures to qualify for a supremely satisfying and wholesome midday fuel-up. It starts with chewy toasted sourdough bread you’ll spread with a layer of guacamole blended with olive oil and everything bagel seasoning for crisp little pops of umami-saltiness. A crisp mixed green salad with juicy grape tomatoes and tangy balsamic glaze is piled over the top. That’s right, you’re just 15 minutes from total lunchtime bliss!
4 ounce
Grape Tomatoes
¾ cup
Guacamole
1 tablespoon
Everything Bagel Seasoning
(Contains: Sesame)
4 slice
Sourdough Bread
(Contains: Soy, Wheat)
2 ounce
Mixed Greens
5 teaspoon
Balsamic Glaze
1 teaspoon
Olive Oil
• Wash and dry produce.
• Halve tomatoes.
• In a medium bowl, combine guacamole and half the Everything Bagel Seasoning (you’ll use the rest later). Add a drizzle of olive oil and stir to combine.
• Toast bread until golden.
• While bread toasts, in a second medium bowl, toss mixed greens and tomatoes with half the balsamic glaze (all for 4 servings).
• Spread a thin layer of seasoned guacamole over toasts. Top with salad, sprinkle with remaining Everything Bagel Seasoning, and serve.
This recipe and the ingredients for avocado toast are fantastic. Even my carnivore husband devours this delicious, healthy breakfast. He would normally eat an all meat breakfast burrito, hot dog or ramen for a quick breakfast. The everything bagel seasoning and balsamic glaze enhance the flavor of the guacamole and mixed greens with grape tomatoes served atop the toasted sourdough bread.
I loved the kick that the balsamic sweet sauce gave the lettuce and tomatoes! And it's all so healthy! But there should've been 4 containers of the delicious avocado, so we could use 2 servings per pkg of toast. I'm just one person and split all my meals - plus I LOVE the avocado! :) Also the avocado spread gives it more 'holding power' since all the spinach leaves tend to want to fall off the toast with the tomatoes. This was GREAT! Something I wouldn't have thought of putting together for myself. :)
I *really* liked the balsamic dressing on the greens and tomatoes for this item. The everything bagel spice was a nice combo with the balsamic, though I'd rather have had an everything bagel! Eating the salad on top of the toast was a bit difficult, maybe would've worked better if I'd cut up the greens first
Your chefs really know what they're doing! I knew this would be good based on the ingredients - basically avocado toast with some lettuce and tomatoes. I realize it's on more of the basic side compared to some of the other recipes but, wow, you made something simple taste so amazing. Definitely exceeded my expectations on this.
Nice addition of the greens and good flavor from the bagel seasoning and balsamic dressing. A little skimpy on the avocado for 4 slices of bread, but delicious overall.
The salad on the toast was a bit strange, so I left it to the side for the second serving and just ate the avocado toast with tomatoes and everything bagel seasoning on it.
It's guacamole - not straight avocado. Big difference in taste and texture. I like both ways but prefer a true smashed avocado toast. It was still good! Love the greens and balsamic glaze. Would buy it again!
I've tried avocado toast before and wasn't a fan but this is wonderful! I think the sourdough bread really holds up and made it better. The balsamic is also a great touch!
A little unwieldy for a breakfast on the go, but a refreshing change of pace-love the tangy arugula and balsamic with the bright tomatoes and creamy avocado. Yum for a relaxed brunch dish!
A good wholesome breakfast. I liked the taste of the balsamic dressing over the spinach and tomatoes, like a salad. I added bacon which made it like a BLT.
