Cooking Oil

teaspoon (tsp)
Black Pepper

Wash and dry produce.
Quarter lemon. Dice tomato into ¼-inch pieces. Quarter cucumber lengthwise; slice crosswise into ¼-inch-thick pieces. Halve pitas; gently pull apart to create pockets.
In a small bowl, whisk together a drizzle of olive oil, juice from one lemon wedge, salt, and pepper. Add tomato and cucumber; stir to combine.

Heat a drizzle of oil in a large pan over medium-high heat. Add beef*, breaking up meat into pieces; stir in stock concentrate, half the Za’atar Spice (all for 4 servings), salt, and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes.
Turn off heat; transfer to a plate. Wipe out pan.
While beef cooks, drizzle the outside of each pita half with olive oil, rubbing all over to ensure even coverage. Sprinkle all over with Everything Bagel Seasoning, pressing to adhere.

Return pan used for beef to medium heat. Add seasoned pita halves to pan; cook until lightly toasted, 2-3 minutes per side.
Meanwhile, in a second small bowl, mix together yogurt, hummus, 1 tsp water, and juice from one lemon wedge until combined (for 4 servings, use 2 tsp water and juice from two lemon wedges).

Spread insides of pita halves with yogurt hummus sauce (make sure to save some for drizzling on top!). Evenly divide beef between pitas; top with tomato-cucumber salad.
Divide pitas between plates. Drizzle with as much hot sauce and remaining yogurt hummus sauce as you like. Serve with remaining lemon wedges and any remaining tomato-cucumber salad on the side.
These were AWESOME!!! We love Mediterranean food and having a recipe so that you can make it easily at home is wonderful. We absolutely loved the pita with the everything spice. Will definitely get this one again!!!!
We loved this recipe! It was easy to prepare, it wasn't spicy but had great flavor!! Also the pitas that came in this bag were different than the ones in my other meal and they were much fresher.
Coating the pita bread with olive oil and Everything Spice before heating was an essential aspect of the recipe rating. The pita was moist and so flavorful. The spices in the meat also elevated the taste. Well done!
Za'atar spices are new to me and have become a favorite. I have since bought some so I can experiment with other food. This recipe is a winner!
I had my husband cook dinner for us this weekend and it was nice again I didn't have to do anything to help. The instructions were clear and the pitas were so tasty. I recommend toasting the pitas before stuffing them with the meat. And I actually added the cucumber salad to my pita since it was a tasty combo. Would order again.
Spice packet for this recipe is very flavorful. I added onion and fresh garlic to the meat mixture. Wish the portions of the yogurt hummus sauce were larger. It really added good flavor. Also added red cabbage to the pita for more veggies.
Excellent - but very messy! 😁 The spices did not stick to the pitas very well and ended up a bit greasy. Maybe next time I will just add the spices directly to the meat.
Great flavor combo. The seasoning on the outside of the pita is kind of a mess. Probably would work better to just mix it in the sauce or meat. Or even sprinkle it on the inside of the pita.
Toasting the pita bread with Everything Bagel made it taste so fabulous. The pita breads were a little thin so that made eating a little messy but the flavors were great. Hummus was a perfect and healthy topper.
Had fun making the pitas. Very flavorful without being salty. The fresh veggies brought it all together!
