Cooking Steps

Prep
1
  • Wash and dry produce.

  • Quarter lemon. Dice tomato into ¼-inch pieces. Quarter cucumber lengthwise; slice crosswise into ¼-inch-thick pieces. Halve pitas; gently pull apart to create pockets.

  • In a small bowl, whisk together a drizzle of olive oil, juice from one lemon wedge, salt, and pepper. Add tomato and cucumber; stir to combine.

Cook Beef & Season Pitas
2
  • Heat a drizzle of oil in a large pan over medium-high heat. Add beef*, breaking up meat into pieces; stir in stock concentrate, half the Za’atar Spice (all for 4 servings), salt, and pepper. Cook, stirring occasionally, until browned and cooked through, 4-6 minutes.

  • Turn off heat; transfer to a plate. Wipe out pan.

  • While beef cooks, drizzle the outside of each pita half with olive oil, rubbing all over to ensure even coverage. Sprinkle all over with Everything Bagel Seasoning, pressing to adhere.

  •

Toast Pitas & Mix Sauce
3
  • Return pan used for beef to medium heat. Add seasoned pita halves to pan; cook until lightly toasted, 2-3 minutes per side.

  • Meanwhile, in a second small bowl, mix together yogurt, hummus, 1 tsp water, and juice from one lemon wedge until combined (for 4 servings, use 2 tsp water and juice from two lemon wedges).

Finish & Serve
4
  • Spread insides of pita halves with yogurt hummus sauce (make sure to save some for drizzling on top!). Evenly divide beef between pitas; top with tomato-cucumber salad.

  • Divide pitas between plates. Drizzle with as much hot sauce and remaining yogurt hummus sauce as you like. Serve with remaining lemon wedges and any remaining tomato-cucumber salad on the side.

Customer reviews

Review summary

Updated on Dec 2025
  • Flavor: Many loved the za'atar seasoning and everything bagel pitas, though some found the beef bland; adding feta cheese boosted flavor 🧀.
  • Ease of prep: Quick and simple to make, but coating pitas with oil and seasoning was messy for some.
  • Suggestions: Consider mixing everything seasoning into meat or sauce instead of on pitas; add more veggies and sauce for better balance.
  • Portions: Several wanted more cucumber-tomato salad and sauce; some felt the meat portion was too large compared to other components.
  • Texture: Pitas often broke or fell apart when filled; toasting them less or using thicker pitas might help.
