There’s a reason why Elaine craved a big salad on Seinfeld. A small one just isn’t satisfying enough. That’s why we crafted this Greek salad to have lots of goodies in generous portions. There are the usual suspects: crisp romaine, juicy tomato, and cool cukes. But we top the bowl with juicy pork patties made with feta and seasoned with our Turkish spice blend so they’re packed with flavor. We also add hummus and more feta to the salad, and dress it with a creamy Greek vinaigrette. All-in-all, it’s an Elaine-worthy salad!

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1

• Wash and dry produce. • Dice tomato into ½-inch pieces. Trim and quarter cucumber lengthwise; slice crosswise into ½-inch-thick pieces. Trim and thinly slice scallions, separating whites from greens; mince whites. Trim and discard root end from lettuce; chop leaves into 1-inch pieces.

Form Meatballs
2

• In a medium bowl, gently combine pork*, scallion whites, half the Turkish Spice Blend (all for 4 servings), ¼ of the feta, salt (we used ½ tsp; 1 tsp for 4), and pepper. • Form into six 1½-inch meatballs (12 meatballs for 4). TIP: Coat hands with cold water first to prevent sticking.

Cook Patties
3

• Heat a drizzle of oil in a large pan over medium-high heat. Add meatballs; gently press down with a spatula to make ½-inch-thick patties. (TIP: Depending on the size of your pan, you may need to work in batches.) Cook until browned and cooked through, 2-3 minutes per side.

Season & Make Dressing
4

• In a small bowl, toss tomato and cucumber with a pinch of salt and pepper. • In a separate small bowl, combine Greek vinaigrette and sour cream. Slowly drizzle in 1 TBSP olive oil (2 TBSP for 4 servings), whisking continuously. Taste and season with salt and pepper.

Toss Salad
5

• In a large bowl, toss lettuce and scallion greens with dressing to taste. Taste and season with salt and pepper if needed.

Serve
6

• Divide salad between bowls. Arrange patties, tomato and cucumber, hummus, and remaining feta on top in separate sections. Drizzle any remaining dressing over patties and serve.

Ground Pork is fully cooked when internal temperature reaches 160°.

Light and easy to prepare. Nice flavor combinations of the spiced patties and the Greek style salad.

Different spin on greek salad. Added cherry tomatoes for an extra kick. Served with bread on the side.

The pork and feta patties were delish!! The hummus wasn't very tasty and the Greek dressing could have been a bit more authentic Greek vinaigrette vibes

Where to start? While in the end this was tasty, I felt that there were some missteps in the recipe and ingredients. First of all, one small head of "baby Romaine" doesn't come close to being sufficient for a meal for two. Second, the recipe took what seemed to be a perfectly acceptable Greek vinaigrette dressing and bulked it up calorie wise with sour cream and olive oil. Finally, while the red pepper hummus is tasty, we weren't sure how it fit in the salad-as an additional dressing? Or as a schmear? Apologies for being long winded, but felt I needed to share.

Really like this salad, the spiced pork patties were a change from chicken on most greek salads. The only thing i would change would maybe add some pita bread.

First of all, it's a Greek Salad ... it's already gonna be amazing. But the beef patties were a great addition.

Very easy. The pork patties added protein to the Greek salad we prepare from our own ingredients. I can take or leave hummus, but this was very good.

I was genuinely surprised about this recipe. I selected a different meal because I'm not a fan of Greek food, but my selections didn't save properly for some reason. This was probably my favorite meal this week! The meat tasted fantastic and the dressing was the perfect amount. Hubby left out the cucumbers for me since I don't like them and I didn't feel like anything was missing at all. We happened to have extra red pepper hummus in the fridge so we added some to our bowls. I was skeptical, but I'd get this one again!

The concept was weird. A salad but with meat Pattie's on it and thick hummus? The flavors were good, but honestly I just used the hummus with some veggies as a snack and crumbled up my meat over the salad. But still very good!
