• Wash and dry produce.
• Quarter cucumber lengthwise; slice into ½-inch-thick pieces. Halve tomatoes. Pick and roughly chop fronds from dill. Halve lemon. Halve pitas.
• In a medium bowl, toss together cucumber, tomatoes, pepitas, half the dill, a large drizzle of olive oil, and a squeeze of lemon juice to taste. Season generously with salt and pepper.
• In a small bowl, combine sour cream, remaining dill, and a squeeze of lemon juice to taste. Season with salt and pepper.
• Wrap pitas in damp paper towels and place on a plate. Microwave until warm, 20 seconds. Fill each pita with a bit of hummus, veggie salad, dill sauce, feta, and hot sauce to taste. Serve.
My husband previously liked this meal so I ordered it again. We both like the crunchy texture in this pita and the cucumbers provided do not disappoint. They are the crunchiest cucumbers ever! My husband always claims to dislike hummus, but he never notices it is in his pita! LOL! This is a great summer meal when it is too hot outside to spend time over a hot stove. We both love the spicy drizzling sauce. It kicks the pita up a notch or two in flavor profile.
Perfect no cook lunch! The ingredients were amazingly fresh and I ate the leftovers as a side salad. We toasted the pita in the air fryer which made the pockets taste even better!
Love this recipe. I mix the tomatoes and cucumbers with the hummus and sauce, to make it more cohesive, and then I put all of that in the pita pocket. Additionally, I swapped the Dill for Parsley.
I enjoyed putting together and eating these pitas. The dill was the real standout here -- I used quite a lot of it this time, and could sense the flavor. The feta lacked a little flavor, but packed in the pita with the other ingredients, it was fine.
Definitely needed the hummus on both sides of the pita pocket, but otherwise quite tasty and filling for a quick lunch!
I sliced my cucumbers into rounds instead of chunks, seemed to fit better in the pita as I could layer the filling
You did not hold back on the feta and I appreciate that.
This worked better as a cucumber salad with cheese and then eating the pita with the hummus. The flavors were awesome, but the pita didn't make great pockets and I gave up and ripped it into pieces and ate with the hummus.
The pita pockets are too small - this worked better as a salad with pita and hummus on the side.
Really great flavors. The pita can be a little dry. Try adding extra sauce.
