Cooking Steps

Assemble Quesadillas
1
  • Place tortillas on a clean work surface. Divide falafel between tortillas, arranging along the top half. Using the back of a fork or your fingers, press down on each falafel to smash.

  • Sprinkle smashed falafel with Southwest Spice Blend, Mexican cheese blend, and pepper jack.

  • Fold tortillas in half to create quesadillas.

Cook Quesadillas
2
  • Heat a drizzle of oil in a large pan over medium heat. Add quesadillas and cook until tortillas are golden brown and cheese melts, 1-2 minutes per side. TIP: Depending on the size of your pan, you may need to work in batches.

Make Salad
3
  • Empty contents of salad kit into a medium bowl; drizzle with as much dressing as you like. Toss to combine.

Finish & Serve
4
  • Cut quesadillas into wedges.

  • Divide quesadillas and salad between plates. Serve with guacamole, tzatziki, and hot sauce on the side.
