
In developing Low-Lift suppers, our chefs used their tool kit of culinary hacks and fresh, flavorful ingredients to craft easy-cook meals that will fast-track you to dinner in 20 minutes. In this one-pan wonder, crispy falafel are smashed into flour tortillas with Southwest spices and a blend of Mexican and pepper jack cheeses, then pan-fried until golden and melty. These fusion quesadillas are served alongside a fresh Southwest salad kit and cooling dollops of both guacamole and tzatziki for a Mediterranean-meets-Tex-Mex feast. Place tortillas on a clean work surface. Divide falafel between tortillas, arranging along the top half. Using the back of a fork or your fingers, press down on each falafel to smash.
Sprinkle smashed falafel with Southwest Spice Blend, Mexican cheese blend, and pepper jack.
Fold tortillas in half to create quesadillas.

Heat a drizzle of oil in a large pan over medium heat. Add quesadillas and cook until tortillas are golden brown and cheese melts, 1-2 minutes per side. TIP: Depending on the size of your pan, you may need to work in batches.

Empty contents of salad kit into a medium bowl; drizzle with as much dressing as you like. Toss to combine.

Cut quesadillas into wedges.
Divide quesadillas and salad between plates. Serve with guacamole, tzatziki, and hot sauce on the side.
