Toast: the best thing since sliced bread. Delicious on its own, this carby comfort gets worlds better in the hands of our talented chefs. Slices of sourdough are brushed with garlic oil, toasted to golden perfection, and spread with creamy, herby ricotta. On top of that, there’s a layer of meltingly-sweet garlic-roasted grape tomatoes and crunchy walnuts. The finishing touches are a sprinkling of Parmesan, more chopped herbs, and a drizzle of tangy-sweet balsamic glaze. This, friends, is truly a toast with the most.

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

1

Adjust rack to top position and preheat oven to 450 degrees. Wash and dry all produce.

2

Peel and grate or mince garlic. Halve tomatoes; toss on a baking sheet with half the garlic, a large drizzle of olive oil, and a pinch of salt and pepper. Roast on top rack until tomatoes are lightly charred, 8-10 minutes. Transfer to a medium bowl. Carefully wipe off sheet with paper towels.

3

Meanwhile, pick parsley leaves from stems; mince leaves. Mince chives. In a second medium bowl, combine 1 cup ricotta, half the Parmesan (save the rest for serving), and half the minced herbs. Season with salt and a pinch of chili flakes to taste.

4

In a small bowl, combine remaining garlic and a large drizzle of olive oil; season with salt and pepper. Brush one side of each slice of sourdough with garlic oil. Place on baking sheet used for tomatoes. Bake on top rack until toasted, 4-5 minutes total.

5

Remove sheet from oven; add walnuts to same sheet. (TIP: If sourdough is done at this point, remove from sheet.) Return to oven until walnuts are toasted, 2-3 minutes. Transfer to a cutting board to cool slightly; roughly chop.

6

Divide toasts between plates; spread with herby ricotta. Evenly top with tomatoes, walnuts, and remaining Parmesan. Sprinkle with remaining minced herbs and chili flakes to taste. Drizzle with as much balsamic glaze as you like and serve.

The flavor and texture pairing on this was perfect. Roasted walnuts and tomatoes, creamy ricotta cheese, savory fresh herbs, and sweet and tangy balsamic glaze. Best toast I've ever made!

Delicious, beautiful, and so simple! The roasted tomatoes were sweet, the balsamic glaze was perfect, and the walnuts added the perfect crunch. Very easy to make and positively memorable.

This was an easy and tasty meal! It was like eating a fancier, more filling bruschetta. The bread had a lovely buttery taste to it, which was surprising for only having olive oil and garlic. Juicy tomatoes, creamy ricotta. Loved the balsamic glaze on top too!

A-mazing! The crunch from the toast, the smooth creamy saltiness from the cheese, the nutty flavor from the walnuts, and the sweetness from the tomatoes come together to make the perfect flavor combination. Quick and easy to make. One of my faves!

I didn't want nearly as much ricotta mixture on the toast as it called for, but I loved this! The charred tomatoes along with everything else was so tasty. My only complaint was that the walnuts included were quite stale and bitter.

I think the addition of some pesto, and maybe more tomatoes would improve this dish, as well as baking some once the toast is put together as the cold ricotta kind of made a strange combo with the toast and charred tomato

This might be the best meal HelloFresh offers! I did not even bother charring the tomatoes and instead made this like the regular tomato and ricotta toasts and it came out fine. I love how fast and easy this meal is. Also, it is something I never would have thought of on my own, yet it has become one of my favorite meals for lunch or dinner!

I love these so much and try to make them better everytime I order them. I have found that making sure the bread is almost hard is the key; it softens beneath all that ricotta. The walnuts toasted is also key!

Amazing. The crispy bread with the soft ricotta and tomatoes work really well. And the sweetness from the balsamic and roasting tomatoes pair excellently.

This was absolutely delicious. I had one slice of this toast with a mini waldorf salad with balsamic vinegar, craisins, candied walnuts, etc. I do wish it came with more balsamic glaze.
