
Melty cheese. Creamy sauce. One pan, and minimal clean up. Yeah, that’s a recipe for quick mealtime success! Tonight, we’ve got beef and green bell pepper–stuffed tortilla melts filled with two luscious fillings: cheddar cheese and a spicy cream sauce. And don't worry, there's extra sauce for dipping, too! The best part? This melted goodness all comes together in one pan in just 25 minutes.

• Wash and dry produce. • Halve, core, and thinly slice bell pepper into strips. • In a small microwave-safe bowl, combine sour cream, cream cheese, 1 tsp water (2 tsp for 4 servings), and hot sauce to taste. (Start with half the hot sauce, then taste and add more from there if you like things spicy.) Microwave until softened, 30 seconds. Stir to combine.

• Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add bell pepper and cook, stirring occasionally, until slightly softened, 2-3 minutes.

• Add beef* to pan with bell pepper. Season with a big pinch of salt and pepper. Cook, breaking up meat into pieces, until beef is browned and cooked through and bell pepper is tender, 3-4 minutes. Carefully drain any excess grease in pan. • Stir in stock concentrate until combined. Turn off heat.

• Place tortillas on a clean work surface. • Spread one half of each tortilla with half the cream sauce (save the rest for serving). Using a slotted spoon, top cream sauce with beef filling, then sprinkle with cheddar. Fold tortillas in half to create tortilla melts.

• Wipe out pan used for filling. Melt 1 TBSP butter (2 TBSP for 4 servings) in same pan over medium heat. • Add tortilla melts (work in batches for 4); cook until tortillas are golden brown and cheese melts, 3-4 minutes per side. • Transfer to a paper-towel-lined cutting board.

• Cut tortilla melts into wedges. • Divide between plates and serve with remaining cream sauce on top or on the side for dipping.
The One-Pan Cheesy Tortilla Melts were quick, comforting, and full of flavor! Enjoyed by the pickiest eaters. The cheesy filling with spiced beef and veggies had a great Tex-Mex taste, and the crispy, golden tortillas brought everything together. A great choice for a busy weeknight when you want something satisfying, fast & easy.
Easy and very tasty - second time having made these one-pan cheesy beef tortilla melts, but won't be the last time!
The last time we had this meal, the filling didn't seem to fill the tortillas enough. So, this time I added a whole onion, a poblano, a little extra ground beef, and the zest and juice of a lime. We mixed the zest and half the lime juice into the cream sauce, and the rest of the lime into the beef mixture They were MUCH tastier! With the addition of the lime zest and lime juice, we loved the cream sauce.
Very solid recipe. Good flavor and use of ingredients. Only have 2 complaints. First my green pepper was damaged on arrival. Still was usable but left less than desired after cutting off the damaged bit. Second, not fully sure how to flip the tortillas once they got in the pan. Was not the easiest process and took two spatulas while losing bits of filling.
Quick and easy. Very good recipe for these tortilla melts. I also added taco seasoning to my ground meat for extra flavoring. We would definitely order it again
Quick and simple, and of course delicious! You really can't go wrong with tortilla melts. I was surprised to not see any spices listed in the ingredients, but honestly the salt, pepper, and green peppers in the meat mixture was enough flavor.
Pretty good! I threw in my own taco seasoning since salt and pepper is just a really bland way to make tortilla melts! I've noticed this in a lot of recipes I receive and I think you guys should include more seasonings into your recipes!
These cheesy beef tortilla melts were better than any restaurant version! The cream cheese mixed in the sauce was genius! My favorite meal thus far!
Yummy dish, especially the sauce, and the tortilla was scrumptious. I'd like some veggies besides the lone green pepper (a tomato or zucchini). We will have this again!
Excellent, after I added chopped onions to the beef and peppers. I especially liked that it was not too saucy and the Tortillas came out crisp, and not soggy.
