The best kind of soup? One made in a single pot that boils up delicious flavor in just 20 minutes. This one does just that. Meaty Italian chicken sausage, kale, and carrot are cooked together, then rich chicken stock concentrate, cream sauce, and cannellini beans are stirred in for even more hearty flavor. We won’t judge if you lick the bowl clean...

• Wash and dry produce. • Trim, peel, and halve carrot lengthwise; thinly slice crosswise into half-moons. Remove and discard any large stems from kale; chop into bite-size pieces. Drain and rinse beans. Quarter lemon.

• Heat a drizzle of oil in a large pot over medium heat. Add sausage*; using a spatula, press into an even layer. Cook, undisturbed, until browned on bottom, 2-3 minutes. • Break up meat into pieces, then add carrot, kale, and ½ tsp salt (1 tsp for 4 servings). Cook, stirring occasionally, until sausage is cooked through, carrot is slightly softened, and kale begins to wilt, 3-4 minutes.

• Meanwhile, in a small bowl, combine cornstarch with 1 TBSP water (2 TBSP for 4 servings) until mixture is smooth and no lumps remain. TIP: Mix with your finger to ensure there are no lumps! • Stir stock concentrates, cornstarch slurry, half the beans, and 1½ cups water (3 cups for 4) into pot with sausage mixture. Using the back of a wooden spoon or spatula, partially mash beans in pot. • Cover and bring to a boil, then immediately reduce to a low simmer. Cook until kale is wilted and broth has thickened slightly, 3-5 minutes. TIP: Check if the kale is wilting evenly and stir occasionally if necessary. • Stir in cream sauce base, remaining beans, and a big squeeze of lemon juice. Cook until combined and warmed through, 1-2 minutes. (TIP: Add another splash of water if you prefer a thinner broth.) Season with salt and pepper to taste.

• Divide soup between bowls. Serve with remaining lemon wedges on the side.
Oh, my! What a surprisingly fabulous soup! Hearty and filling - and toothsome, too. The carrots and kale were perfectly cooked, not too soft or crunchy, and the sausage seasoning added plenty of basil notes to the soup. The beans had plenty of body, and everything added up to a gorgeous, texture rich supper. I'd recommend serving with cheddar biscuits.
This soup is packed with flavor and healthy ingredients. The Kale, beans, carrots and chicken sausage blend well together. It also made more than 2 servings. Perfect for left overs. Definitely will be making this often during the colder months.
I love the one-pot soups and the chicken sausage just has so much flavor, it's the best. Love how easy this one is to throw together.
Super quick and easy but really delicious! I served with a grilled cheese. I ended up using chicken sausage from the store bc I used the chicken sausage it came with for a different HF recipe. Smashing the beans was a little difficult but if you have a pot holder to hold the pot still it is easier. TBH next time I'll smash a few before putting into the soup bc it was like trying to smash a bunch of swimming beans! This will definitely be a repeat recipe! Oh I did add an extra carrot in mine as well. Lemon was not overpowering and added just the right amount of flavor.
I tried this as an experiment thinking that I wouldn't really like it but it was amazingly delicious. I don't like carrots but I included them anyway and the spicy chicken sausage masked their taste. I would definitely make this soup again.
This soup is great. But I chop up a small onion & cook it before, cooking the chicken sausage . And also add Italian seasoning to the soup. And I don't use the white sauce at all. I save the white sauce for potato soups.
This was a quick and easy meal. Very tasty with fresh veggies, but I decided to cut the carrots into smaller pieces which helped them cook quicker and more evenly. The sausage was spicy and very good. The rest need a little more seasoning. I added a little garlic powder, onion power and some crushed red pepper. Very enjoyable meal.
The chicken sausage dominates the flavor. The kale and carrots offered a good serving of vegetables. I just thought it could use a bit more spice. Some fresh thyme would be a great add.
Loved the flavor and the ease. The pre-chopped kale made it super fast. I do wish there were 2 carrots instead of 1 since the photo made it look like there was lots of carrot in it. And I love your chicken sausage.
The carrot was nice and crisp--not droopy and the soup had a nice flavor and the preparation was relatively easy. The kale had much less large stems compared to previous shipments making it easier to prepare.
