It's everything you love about a Caesar salad—plus rich Parm-crusted salmon! You'll broil the salmon dusted with garlic and Parmesan till the cheese is crispy. Serve it over a crunchy romaine salad with juicy heirloom grape tomatoes, zingy red onion, more Parm, and crunchy croutons. It's all tossed in a Caesar dressing enhanced with fresh lemon juice and zest.

Cooking Oil

• Heat broiler to high. Wash and dry produce. • Pat salmon* dry with paper towels. Rub all over with oil; season with half the garlic powder, salt, and pepper. Place salmon, skin sides down, on a foil-lined baking sheet. Top with half the Parmesan, pressing to adhere. Broil on top rack until salmon is cooked through and cheese is crispy, 4-8 minutes. (Check your salmon frequently to make sure the crust isn't burning!)

• Meanwhile, zest and quarter lemon. Trim and discard root end from lettuce; chop leaves into bite-size pieces. Halve tomatoes. Halve, peel, and thinly slice half the onion (all for 4); soak sliced onion in a small bowl with cold water.

• In a large bowl, combine lemon zest, dressing, remaining garlic powder, juice from one lemon wedge (two wedges for 4), salt, and pepper. • Add lettuce, tomatoes, sliced onion (draining first), half the croutons, and remaining Parmesan; toss until evenly coated.

• Divide salad between shallow bowls. Top with remaining croutons and salmon. Serve with remaining lemon wedges on the side.
Fish is fully cooked when internal temperature reaches 145°.
The BEST! Crusty Parmesan added a bit of crunch on the salmon. The little bit of extra garlic, lemon zest and lemon juice made the dressing perfect. Loved this meal.
Great flavor, but cooking instructions need to be changed. 4-8 minutes under a high broiler was too long - my cheese started to burn at just a little over 3 minutes.
It was very good but I would add additional Caesar dressing as the flavor was not as strong as I would have liked. If that is impossible then I would at least more parmesan cheese.
The salmon did not cook under the broiler. It was impossible to cook the salmon properly without burning the cheese on top. I think the salmon should be cooked normally for a few minutes before getting the cheese put on top and then broiled.
I'm used to the HF portions of meat so the salmon size was expected...but there was such a small amount of lettuce, especially when this is supposed to serve two people! Luckily I had a big lunch that day so I let my husband eat most of this.
We really liked the salmon. The salad was good. I soaked the red onion in cold water but it still was very strong. Send more Parmesan cheese.
Salmon was perfect & salad delicious flavors. Will order again.
Stingy on the salmon. The meals tend to be stingy on meat, but it's very noticeable in this meal. A bit more and this would be 4 star.
Excellent but too small. We should have received two bundles of romaine lettuce, not one small bundle for two meals.
Never tried salmon before these but it was actually good!
