Figgy Pop: Use a peeler to get several two-inch pieces of orange peel, set aside. Cut the oranges in half. To a cocktail shaker or mixing glass, add fig jam and juice of two oranges (about 2oz). Stir to combine. Add ice and 6oz Doc Pop then stir to mix and chill, 5-10 seconds. Strain into a rocks glass full of ice. Pick up one of the orange peels and hold over the glass. Grab the long edges of the orange peel and squeeze together so the outside, shiny edge bends towards the rim of the glass - this will express the scented oils from the peel. Drop peel into the drink and repeat with the other glass.
Fresh Fall Smash: Thinly slice 1/2 of the of the apple. Cut the lemons in half. Peel and grate ginger on a microplane until you have 1/2 tsp. To a cocktail shaker or mixing glass, add a few apple slices, ginger and hot honey. Mash (aka muddle) the apple with the end of a wooden spoon or similar, stirring as you go. Add 6oz Doc Pop and stir to dissolve the honey. Add ice and stir to mix further and chill, 5-10 seconds. Strain into a coupe glass. Take 3 apple slices and fan them out, then float them on top of the drink. Repeat with the other glass.
