
The only thing better than a really great sandwich is one that takes just minutes to prepare! This Really Great Sandwich starts with toasted flatbreads that have a crunchy pizza crust vibe. Add juicy tomato, salty prosciutto, creamy fresh ricotta, and a tangle of sweet balsamic-dressed arugula. For extra points, there’s a fresh arugula salad on the side. Lunch in 10 minutes doesn’t get better than this!

• Halve flatbreads crosswise; toast until golden.
• Wash and dry produce.
• Thinly slice tomato into rounds; lightly season with salt and pepper.
• In a large bowl, combine vinegar, a large drizzle of olive oil, and ½ tsp sugar (1 tsp for 4 servings). Add arugula and toss to combine; season with salt and pepper.
• Spread smooth sides of toasted flatbreads with ricotta. Top half the flatbreads with prosciutto, tomato slices, and as much salad as you like. Top with remaining flatbreads, coated sides down.
• Halve sandwiches crosswise. Divide between plates; serve with any remaining salad on the side.
Perf! Loved the flavors of ricotta, prosciutto, arugula and balsamic mixed together. The flat bread was excellent choice, thicker bread would not be as good. I assembled my sandwich and then toasted in a frying pan with a little olive oil to give a crispy texture.
This was really tasty. But I do wish there was more prosciutto. If it's supposed to be a prosciutto sandwich it should be the main part. I don't think 2 slices per sandwich was enough.
Who knew a sandwich at home could be so good? Creative use of ricotta! I love the dishes with the balsamic glaze.
Recommend adding a bit of lemon zest and lemon juice into the ricotta and mixing well before starting the rest. By the time you are building the sandwiches, the lemon has integrated with the ricotta and adds a fresh tang to the sandwiches. Also, not enough prosciutto included for 4 sandwiches.
My husband loves these sandwiches. Great texture and flavor combinations. The flat bread is good quality.
It needed additional balsamic glaze which I had in my pantry and that was the finishing touch!

I had an extra person over so I added deli ham to them. Mine came out looking just like the picture. Very yummy
Nothing extraordinary, but for a tasty, quick lunch it checks all the boxes! Also can't go wrong with prosciutto and arugula!
It tasted good and everything went well together. I just think a different bread (demi-baguette) might work better to soak up the dressing from the arugula salad.
