Perf! Loved the flavors of ricotta, prosciutto, arugula and balsamic mixed together. The flat bread was excellent choice, thicker bread would not be as good. I assembled my sandwich and then toasted in a frying pan with a little olive oil to give a crispy texture.

This was really tasty. But I do wish there was more prosciutto. If it's supposed to be a prosciutto sandwich it should be the main part. I don't think 2 slices per sandwich was enough.

Recommend adding a bit of lemon zest and lemon juice into the ricotta and mixing well before starting the rest. By the time you are building the sandwiches, the lemon has integrated with the ricotta and adds a fresh tang to the sandwiches. Also, not enough prosciutto included for 4 sandwiches.

It tasted good and everything went well together. I just think a different bread (demi-baguette) might work better to soak up the dressing from the arugula salad.
