We’re all looking for that healthy but tasty, hearty but not heavy, and all-around satisfying dinner idea. Sure, you can make a bowl of pasta, but when you’re wanting something light, check out what our chefs dreamed up: Tender kale with charred snap peas, scallions, and carrot coated in a creamy ponzu-sesame dressing with a little kick. Add juicy seared chicken and an extra drizzle of sauce and it’s a perfect bowl of wholesome yum (or yum yum, in this case)!

Produced in a facility that processes eggs, milk, fish, peanuts, sesame, shellfish, soy, tree nuts, and wheat.

Cooking Steps

Prep
1
  • Wash and dry produce.

  • Trim scallions and cut into 1-inch pieces. Trim and remove strings from snap peas. Remove any large stems from kale; roughly chop into bite-size pieces. Peel and grate carrot on the largest holes of a box grater.

Make Yum Yum Sauce
2
  • In a small bowl, combine mayonnaise, sesame dressing, ponzu, Sriracha, 2 TBSP olive oil (4 TBSP for 4 servings), and 1 tsp sugar (2 tsp for 4) until smooth. Season with salt and pepper to taste.

Char Veggies
3
  • Heat a drizzle of oil in a large pan over medium-high heat. Add scallions and snap peas; cook, stirring occasionally, until veggies are lightly charred and tender, 4-5 minutes. Season with salt and pepper.

  • Turn off heat; transfer to a medium bowl. Wipe out pan.

Cook Chicken
4
  • Pat chicken* dry with paper towels. Season all over with garlic powder, salt, and pepper.

  • Heat a drizzle of oil in same pan over medium heat. Add chicken and cook until golden brown and cooked through, 5-7 minutes per side. (TIP: Reduce heat if chicken begins to brown too quickly.) Transfer chicken to a cutting board.

Toss Salad
5
  • Place kale in a large bowl and add a drizzle of olive oil. Using your hands, massage kale (similar to how you would knead dough) until leaves are tender, 1-2 minutes.

  • Add charred veggies, grated carrot, and ¾ of the yum yum sauce to bowl with kale; toss to combine.

  • Taste and season with salt and pepper.

Finish & Serve
6
  • Slice chicken crosswise.

  • Divide salad between bowls and top with chicken. Drizzle with remaining yum yum sauce and serve.

WOW!!!! Our home's #1 favorite Hello Fresh meal - I've never "massaged" kale with olive oil before eating it, I will be doing this more often! The Yum-Yum sauce was absolutely fantastic, the recipe was so quick and easy. Highly recommended to anyone!!!!

Loved this meal even more than expected. The Yum Yum sauce really pulled it together and the charred snap peas and green onions were fantastic. We wanted more of the charred green onions - my husband said they were his favorite part.

This meal was excellent! I simplified it a bit by chopping the carrots and the snap peas into very small julienne shape. I also cut up the green onion, and I did not cook any of the vegetables. Once they were added to the kale and dressing they tasted great fresh. I would definitely get this again.

I loved this meal! The yum yum sauce was really good and it was the first time that I "massaged" the kale. Loved the snap peas too. I will order it again when it is offered. Please do it again!

I'm not a fan of kale, but this changed my mind, I had never eaten kale in a salad; this salad was warm, easy to make and delicious. My 12 yr old granddaughter loved it. Kid friendly prep and an easy way to get kids to eat veggies.

I truly wish you would stop chopping up the kale. It is so difficult, and time consuming, to pick out the stems after you've chopped them all. We didn't care for the YumYum Sauce but the salad itself was good. I added 1⁄2 apple, chopped up which gave a nice additional flavor.

This has been my favorite so far. I lightly wilted the kale so it wasn't crunchy and I used a potato peeler for the carrots instead of grating them.

I turned it into a warm dish by sautéing the kale and adding the rest at the end. Was very good on a cold day

Loved the yum yum sauce and I haven't been failed yet by a kale salad from HelloFresh. Chicken goes perfectly and the portions were wonderful.
