
You could take 10 minutes to debate what to have for lunch, but why not use that time to make these super-satisfying wraps instead? All you have to do is slice and warm pre-cooked chicken with Tex-Mex seasoning, wrap it up in tortillas along with Mexican cheese blend, sear in a hot pan to a golden-brown finish, and sprinkle with scallions and crema. While there may not be such a thing as a free lunch, at least this one’s stress-free (and packed with delicious melty cheese!).

Cooking Oil
• Wash and dry produce.
• Trim and slice scallions, separating whites from greens.
• Pat chicken dry with paper towels. Thinly slice crosswise.
• In a medium microwave-safe bowl, combine chicken, scallion whites, and Tex-Mex paste; cover with plastic wrap. Microwave until warmed through, 2-3 minutes.
• Place tortillas on a clean work surface. Evenly sprinkle Mexican cheese blend on the bottom third of each tortilla; top with chicken mixture. Fold up bottom side of each tortilla over filling, then fold over left and right sides toward filling. Roll up tortillas, starting with filled sides, to form wraps.
• Heat a drizzle of oil in a large, preferably nonstick, pan over medium heat. Add wraps and cook until cheese melts and tortillas are golden on all sides, 4-6 minutes. TIP: Depending on the size of your pan, you may need to work in batches, adding a drizzle of oil for each batch.
• Halve wraps on a diagonal; divide between plates. Drizzle with sour cream and sprinkle with scallion greens. Serve.
I absolutely LOVE these!! I wish that I could get just Tex-Mex paste so I could make them more often, because this is a perfect quick and easy lunch recipe. We use a little bit more oil to fry them, and they come out more like chimichangas that way. The chicken has just the right amount of heat with the Tex-Mex paste, the scallions add a hint of texture and complexity to the flavor. We add some extra "fiesta cheese blend" to it, and we make some sriracha sour cream to drizzle over them. Perfection!!
The tex mex paste has a fantastic flavor, it's so convenient that the chicken was pre-cooked, a perfect meal for a quickly prepped lunch to take on a long work day!
These are really good! The tex-mex paste is tasty, and I was worried about it being too strong but it was a great flavor with the cheese and scallions. Definitely getting this one again.
I know I'm not the only one that raves about the Tex Mex sauce that comes with this meal, but it is CRAZY delicious! I would never have thought such a simple meal could be so fabulous, but it makes for a great lunch, or a quick dinner when I want something easy and fast.
The wrap is good, but the scallions are silly and just fall off when you pick it up. Also, putting the sour cream on the side would be way more logical. It would be nice if it came with some chips or something on the side!
Really good and simple. Not enough Tex Mex paste for the two chicken breast. it should have double of the ingredients. Sour cream, scallions and cheese. Other than that, this recipe is really good.
Very good for a quick lunch. Easy and fast to prepare. Loved the flavor. Really wish I could buy some of the products you send, such as the Tex-mex sauce, or the red pepper crème, etc. Also some of your spices.
Good sized wraps, very yummy, have cooked something similar to this using pre sliced frozen chicken from the grocery store, tortillas, and just salt and pepper. We make them into chicken quesadillas and it tastes almost the same. Very much enjoyed this.
Better to mix the sour cream and all chives in with the chicken. Putting it on the outside is waaayyy too messy when it's not necessary. Also would like to to be less calories or at least add in fresh tomatoes or spinach.
I will literally order a box full of these I ended up putting egg in mine and made it a breakfast chicken wrap it was soooooo good
