In this recipe, pork, pepper, and onion are coated in a sumptuous sweet chili sauce, and peanuts are transformed into the perfect crunchy topping, along with citrusy cilantro. Everything comes together over a bed of fluffy lime-scented rice. The result? A symphony of flavors and textures so delicious, you might just lick the bowl.

• Wash and dry produce. • Halve, core, and thinly slice bell pepper into strips. Halve, peel, and thinly slice onion. Zest and quarter lime. Finely chop cilantro.

• In a small pot, combine rice, 1¼ cups water (2¼ cups for 4 servings), and a pinch of salt. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. • Keep covered off heat until ready to serve.

• While rice cooks, heat a large, preferably nonstick, pan over medium-high heat. Add peanuts, 2 TBSP water, and 1 tsp sugar (2 tsp for 4 servings). Cook, stirring often, until water has evaporated and peanuts are coated and lightly toasted, 3-5 minutes. • Turn off heat; transfer to a small bowl. Wipe out pan.

• Heat a large drizzle of oil in same pan over medium-high heat. Add bell pepper and onion; season with salt and pepper. Cook, stirring, until tender and lightly browned, 6-9 minutes. • Transfer veggies to a plate.

• Add a drizzle of oil to same pan over medium-high heat. Add pork; season with salt and pepper. Using a spatula, press into an even layer. Cook, undisturbed, until browned on bottom, 3-4 minutes. • Break up meat into pieces and continue cooking until pork is cooked through, 2-4 minutes. • Stir in veggies, then add soy glaze, chili sauce, and 1 TBSP butter (2 TBSP for 4 servings). Cook, stirring, until mixture is thoroughly coated, 1-2 minutes more.
Swap in beef or turkey for pork.

• Fluff rice with a fork; stir in 1 TBSP butter (2 TBSP for 4 servings) and lime zest to taste. Season with salt. • Divide rice between bowls and top with pork mixture, peanuts, and cilantro. Serve with lime wedges on the side.
Ground Turkey is fully cooked when internal temperature reaches 165°.
This was our favorite Hello Fresh meal so far. We added a clove of garlic right after browning the turkey to give it a bit more dimension, and my hubby thinks adding zucchini to the mix would be a good addition. Very mild, so we added some Sriracha to give it a bit of zip. Thanks for the yellow pepper instead of the red one. I think the flavor is better with a less sweet pepper.
I LOVED this meal. The ground turkey provided in my box is much more enjoyable than it used to be. It seems like it has more fat content, and is softer than prior varieties. This increased the appeal of the whole dish to me. My only complaint is the recipe calls for a bunch of butter and sugar to be added, and the calories per serving are insane. I opted not to include those add-ons and used half the sauces and it still tasted excellent.
Delicious, simple and special. Learned a new trick for browning ground turkey. The sweet and savory sauce was balanced perfectly by the lime-forward rice.
Needs some spice to balance the sweetness. Added gochugang-so much better. Would add more bell pepper and peanuts. Really should be able to sub turkey without an upcharge
This was a great "surprise" like. I am not a huge bell pepper fan but these flavors blended so well that I didn't even taste the pepper - 2 thumb up
This is a consistent winner and freezes well. Flavor balance is great. Needs some heat, which I add with red pepper flakes or Korean hot sauce.
This was delicious! We subbed w/ pork. don't need to add the sugar to the peanuts - toasting them would be just as good and easier!

Tasty meal and easy to make. Peanuts adds extra time and steps. Not required though.
Sauce needs to have more flavor. I liked the peanuts but thought that the extra step to candy them was unnecessary.
