Roast Sweet Potato

• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Dice sweet potato into ¼-inch pieces. Toss on a baking sheet with a drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 18-20 minutes.

Cook until tender, 6-8 minutes. • Keep covered until ready to serve. (You’ll finish the couscous in Step 5.)

• Slice grilling cheese lengthwise into four large pieces (eight pieces for 4 servings). Place Tunisian Spice Blend on a plate. Coat grilling cheese in spice blend, pressing to adhere. • Heat a drizzle of oil in a large pan over medium-high heat. (TIP: Make sure your oil is shimmering before searing!) Add grilling cheese and cook until browned, 1-2 minutes per side.

Finish Couscous

• Add roasted sweet potato, spinach, and raisins to pot with couscous. TIP: For richer flavor, add 1 TBSP butter; 2 TBSP for 4 servings. • Stir until spinach is slightly wilted and butter has melted.

Serve

• Divide veggie couscous between bowls and top with grilling cheese. Serve.

Hello Fresh has succeeded in turning us into grilling cheese addicts, and the seasoning for this one is probably the best we've seen yet. The only downside was preparation--there is no way I can manage to stuff 10 ounces of fresh spinach into my small pot, much less try to stir it in without getting spinach all over the place. I had to transfer it all to a larger pot, then work with it over low heat to get the spinach to wilt enough so everything could be evenly mixed. If I had to do this one over, I think I'd saute the spinach before adding it to the couscous.

I enjoyed the mix of sweet potatoes with spinach. That was a new combination for me. I enjoyed the meal overall and would order it again but I prefer shawarma seasoning on grilling cheese rather than the Tunisian Spice Blend. But that's just my personal preference - not really a complaint about the meal. If I select this meal in the future, I would just use my own shawarma seasoning on the grilling cheese rather than the Tunisian Spice Blend and then it would be perfect for me.

No recipe included with shipment. Once found and printed, meal was very easy to prepare and was delicious. Surprised at how filling the grilled cheese was and how it complimented the couscous, sweet potato, and spinach. Thought there was too much spinach, especially when mixing in with the couscous and sweet potato, but once served on dishes, it was just right.

My only complaint is that there is no possible way to cook all that spinach in a small pot (I had subbed for a medium pot, but had to switch for an even larger one when it was time to add the spinach).
