
All hail this ten-minute (10!) vegan salad wrap dinner idea! It’s light, creamy, and bursting with crisp textures and bright flavors. You’ll season white beans, tomato, and cucumber, then whip up a bright, creamy, and just a little spicy homemade “faux Caesar” dressing. Then it’s time to wrap! Layers of creamy beans, juicy tomato, crisp cukes, and dressed baby lettuce mingle in warm tortillas. Add a lemony side salad sprinkled with almonds for a vegan dinnertime coup the likes of which Brutus would be proud.

• Wash and dry produce. • Drain and rinse beans. Halve tomato; thinly slice into half-moons. Slice cucumber into rounds. Quarter lemon. Trim and discard root end from lettuce; separate leaves. Reserve a few whole leaves for wraps; chop remaining lettuce into bite-size pieces.

• In a large bowl, combine beans, tomato, and cucumber; season generously with salt and pepper. • Wrap tortillas in damp paper towels and microwave until warm and pliable, 30 seconds.

• In a small bowl, combine mayonnaise, garlic powder, hot sauce, half the mustard, 1½ tsp soy sauce, and juice from half the lemon (for 4 servings, use all the mustard, 3 tsp soy sauce, and juice from whole lemon). Season generously with pepper. TIP: If dressing seems too thick, add water 1 tsp at a time until mixture reaches a drizzling consistency. • In a separate small bowl, whisk together 1 TBSP olive oil (2 TBSP for 4), juice from remaining lemon wedges, salt, and pepper.

• Place tortillas on a clean work surface. Spread tortillas with half the Caesar dressing. Place filling on the bottom third of each tortilla. Top with lettuce leaves and drizzle with as much remaining Caesar dressing as you like. • Fold up bottom side of each tortilla over filling, then fold over left and right sides toward the filling. Roll up tortillas, starting with filled sides, to form wraps. Wipe out bowl. • In bowl used for filling, toss chopped lettuce with lemony dressing and almonds. • Halve wraps on a diagonal; divide between plates. Serve with salad on the side.
The flavor on these white bean Caesar wraps is amazingly delicious! However, we had way too much filling and not enough tortilla. The filling was spilling out the sides of the tortilla and it made it almost impossible to roll them up. Also, if I make this again, I will dice the tomatoes instead of slicing them thinly. Because the filling was spilling out of the tortilla, the tomatoes fell out almost right away. If the tomatoes were diced, they would probably have stayed in better. Perhaps two slightly smaller tortillas per person would work better.
One of the things I've missed as a vegetarian is a good Caesar. I was happily surprised by this vegan version! And the meal was SO easy to make! Definitely a winner.
This is a surprisingly tasty and filling dish. I would like a bit of a different flavor - like a savory versus the hot sauce. Maybe I will try that next time. It is wonderfully light yet plenty hearty for a full meal. I only rated it less than perfect because it is not at the top of my list of faves based on the others I've tried so far.
Ooh!!! This is my fav lunch now. I would order it at least once a month. So quick and easy. Good for transporting to work and holds up overnight. Love a meal for work that's eaten cold but is vegan and interesting and easy to put together. Hard to find! Thanks.
The beans made this very hearty. I had some leftover chicken from my meal the night before which I added to this. Also, I converted this to a salad.
It was very good, I did tweak how I made the dressing, I however didn't have any garlic powder but the soy sauce and everything else was great. Didn't have the directions on hand for this but it worked out. I do have to say that I was happy that it was alll dairy free
Good but, messy. More visuals on how to fold burrito. Lettuce either need to be bottom layer or chopped and mixed up with dressing. Lettuce was turning red and looking not the freshest.
I wasn't so sure about this, but we loved it. The tomatoes we got were under-ripe, so I used other riper tomatoes I happened to have.
Nice, light but filling meal for a summer evening. Flavorful and healthy!
