  • Trim and discard root end from lettuce. Pat leaves thoroughly dry; halve lengthwise, then slice crosswise as thinly as possible. Dice tomatoes into ½-inch pieces.

  • Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. (TIP: To save time, while pan is heating up, transfer taco bar ingredients into serving vessels so they are ready to go!) Add beef* and season with salt and pepper; cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes.

  • Carefully drain any excess grease from pan.

  • Add stock concentrates, ½ cup water, and ⅛ tsp sugar (¾ cup water and ¼ tsp sugar for 8 servings); cook, stirring occasionally, until flavors meld and liquid is reduced, 1-3 minutes.

  • Add Mexican Spice Blend and tomato paste to pan with beef; cook, stirring, until tomato paste is brick red in color, 30 seconds.

  • Add beef stock concentrate, chicken stock concentrate, ½ cup water, and ⅛ tsp sugar (¾ cup water and ¼ tsp sugar for 8 servings); cook, stirring occasionally, until flavors meld and liquid has reduced, 1-3 minutes.

Finish & Serve

  • Wrap tortillas in damp paper towels; microwave until warm and pliable, 30 seconds.

  • Gently crush tortilla chips in their bag.

  • Serve tortillas, beef, lettuce, diced tomatoes, Mexican cheese blend, tortilla chips, sour cream, and hot sauce family style so everyone can make their own tacos.
