
In developing Low-Lift suppers, our chefs used their toolkit of culinary hacks and fresh, flavorful ingredients to craft easy cook meals that will fast-track you to dinner in under 20 minutes. Here, tender al pastor–spiced beef meets corn and brown rice in this one-pan wonder. Crushed tortilla chips add satisfying crunch against creamy cotija cheese, while fresh cilantro and lime bring bright, herbaceous notes. Quick, delicious, and ready when you are!

Wash and dry produce.
Heat a drizzle of oil in a large pan over medium-high heat. Add beef* and season with salt and pepper. Cook, breaking up meat into pieces, until lightly browned, 2-3 minutes.

Once beef is lightly browned, turn off heat and add al pastor sauce to pan; stir to combine.
Return to medium-high heat; cook, stirring occasionally, until beef is cooked through and sauce has slightly reduced, 4-6 minutes. TIP: If sauce is reducing too fast, lower heat to medium.

Meanwhile, drain corn and place in a large bowl. Massage brown rice in package to separate grains; add to bowl with corn. Season with salt and pepper. Stir.
Cover tightly with plastic wrap; microwave until warmed through, 1-2 minutes. Let rest 1 minute.

Halve lime. Crush tortilla chips in bag.
Divide corn and brown rice between bowls and top with al pastor beef. Serve with a squeeze of lime juice. Garnish with crushed tortilla chips and cotija. Tear cilantro over top of bowls (or use kitchen shears to snip over top!).
