Wash and dry produce.
Trim and discard root end from lettuce. Pat leaves thoroughly dry; halve lengthwise, then slice crosswise as thinly as possible. Dice tomatoes into ½-inch pieces.
Heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. (TIP: To save time, while pan is heating up, transfer taco bar ingredients into serving vessels so they are ready to go!) Add beef* and season with salt and pepper; cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes.
Carefully drain any excess grease from pan.
Add Mexican Spice Blend and tomato paste to pan with beef; cook, stirring, until tomato paste is brick red in color, 30 seconds.

Gently crush tortilla chips in their bag.
Serve tortillas, beef, lettuce, diced tomatoes, Mexican cheese blend, tortilla chips, sour cream, and hot sauce family style so everyone can make their own tacos.
