Leave it to the HF chefs to come up with the perfect filling for fresh, crisp baby lettuce leaves: Tender sautéed chicken and shredded carrots tossed with tangy-spicy Buffalo sauce. Load it all into lettuce leaves, top with creamy blue cheese coleslaw and a squeeze of fresh lemon juice, and prepare to be wowed!

Cooking Steps

Prep & Make Buffalo Sauce
1

• Wash and dry produce. • Trim, peel, and cut carrots in half lengthwise, then cut into 1⁄2-inch-thick half-moons. Trim and discard root end from lettuce; separate leaves. Quarter lemon. • Place 2 TBSP butter (4 TBSP for 4 servings) in a small microwave-safe bowl. Tightly cover with plastic wrap and microwave until butter has melted, 30-60 seconds. Stir in Frank’s hot sauce.

Cook Chicken & Carrots
2

• Pat chicken* dry with paper towels; dice into 1⁄2-inch pieces. • Heat a drizzle of oil in a large pan over medium-high heat. Add chicken, carrots, and garlic powder; season with salt and pepper. Cook, stirring occasionally, until chicken is browned and cooked through, 4-6 minutes. Add Buffalo sauce and cook, stirring, 30 seconds more. Remove from heat.

Make Coleslaw
3

• Meanwhile, in a medium bowl, combine coleslaw mix and blue cheese dressing. Season with salt to taste.

Finish & Serve
4

• Divide lettuce leaves between plates; fill with Buffalo chicken. Top with tangy coleslaw. Serve with lemon wedges on the side.

Chicken is fully cooked when internal temperature reaches 165°.

Review summary

Updated on Dec 2025
  • Flavor: Many enjoyed the tangy-spicy Buffalo chicken, though some found it needed more seasoning or spice 🌶️.
  • Ease of prep: Quick and simple to prepare, with several mentioning it's great for a light summer meal.
  • Suggestions: Consider dicing chicken and carrots smaller; some preferred shredded carrots or would add celery for crunch.
  • Portions: Some found it light; adding extra chicken or a side dish could make it more filling.
  • Texture: The crunchy lettuce and coleslaw complemented the chicken well, but a few found the carrots too hard.

If you are hungry for buffalo chicken, this dish is a good one! This was a great blend & healthy variation from your greasy fried chicken wings and blue cheese dressing. Will make this one again... We enjoyed it!

Loved the lettuce wraps to make an often unhealthy dish feel a lot lighter. The blue cheese slaw was awesome but more would have been better. Overall, I really enjoyed this but felt the portions were a bit small.

Really easy & delicious. Love the crunch of the lettuce & the coleslaw mix with the blue cheese dressing. Compliments the spicy chicken mix beautifully!

We were pleasantly surprised with this dish! The carrots were so good with the buffalo sauce. Also very filling without feeling weighed down or miserably full. Loved this one!

Quick and simple. Loved the lettuce as wrap for a healthy gluten free meal.

I did enjoy these lettuce wraps. They were quite tasty. However, they barely made the four servings

I liked this meal very much. The husband did not understand the point of lettuce wraps. Wanted bread

Easy recipe and tastes okay but doesn't quite get there. The Frank's sauce is too diluted to work well here. The Frank's powder would probably have stronger flavor. All of the HF lettuce wrap recipes don't have enough servings for two people for dinner, end up with lots of lettuce left over but no filling. Produce quality very low as usual, on the verge of being spoiled.

My daughter loved the chicken, I loved all of it, but I did modify the slaw because I don't eat blue cheese dressing.
