Forget about that sous-vide machine you thought you might use some day, the full set of pots and pans you got for your new place, and all of the other gadgets taking up space in your kitchen cabinets: Everything in this recipe is prepared on a single baking sheet! Yep, all you have to do is pop it in the oven and wait for dinner to be ready. We’re talking Italian-spiced chicken, lemony broccoli, and spiced spuds. The best part (besides digging in)? Fewer pots and pans means quicker cleanup and more time to enjoy the meal. That’s a weeknight win.

Cooking Steps

Prep
1

• Adjust rack to top position (top and middle positions for 4 servings) and preheat oven to 425 degrees. Wash and dry produce. • Dice potatoes into 1-inch pieces. Cut broccoli florets into bite-size pieces if necessary. Zest and quarter lemon.

Mix Panko
2

• In a medium bowl, combine panko, Italian cheese, 1 tsp Italian Seasoning (2 tsp for 4 servings), 1 TBSP olive oil (2 TBSP for 4), salt, and pepper. Set aside. (Be sure to measure the Italian Seasoning; we sent more.)

Roast Potatoes
3

• Toss potatoes on one side of a baking sheet with a large drizzle of olive oil, half the Fry Seasoning, and a pinch of salt and pepper. (For 4 servings, spread potatoes out across entire sheet and use all the Fry Seasoning; roast 20-25 minutes total.) • Roast on top rack for 10 minutes (you’ll add the chicken and broccoli then).

Coat Chicken
4

• While potatoes roast, pat chicken* dry with paper towels and season all over with salt and pepper. • Evenly spread sour cream onto tops of chicken. Mound with panko mixture, pressing firmly to adhere (no need to coat the undersides).

Roast Chicken & Broccoli
5

• In a large bowl, toss broccoli with a drizzle of oil. Season with salt and pepper. • Once potatoes have roasted 10 minutes, remove sheet from oven. Carefully add broccoli and coated chicken to empty side. (For 4 servings, leave potatoes roasting. Add broccoli and chicken to a second baking sheet; roast on middle rack.) • Return to top rack until potatoes are crisp, broccoli is lightly charred, and chicken is golden brown and cooked through, 15-20 minutes more. TIP: Keep an eye out; potatoes may finish first.

Finish & Serve
6

• Carefully toss broccoli with lemon zest; add lemon juice to taste. TIP: For an extra-rich experience, toss with 1 TBSP butter (2 TBSP for 4 servings). • Divide chicken, potatoes, and broccoli between plates. Serve with any remaining lemon wedges on the side.

LOVE THIS ONE! So easy to prepare and bursting with flavor! The potatoes and broccoli came out great. The timing and prep for the chicken resulted in a super moist and flavorful dinner. I really like the sour cream coating with the cheese and panko - came out so crispy. The sheet pan prep is fantastic during a tiring work week.

Loved the easy prep and sheet pan cooking for this recipe. I love a good sheet pan recipe. The chicken stayed juicy and the crunchy Italian topping was delicious. The fry seasoning on the potatoes was sooo good! And we love roasted broccoli at our house. Winner winner chicken dinner!

We loved this meal!! The only reason i gave 9.5/10 was my fiancé doesn't like lemon and said the broccoli tasted bitter. (I thought it was okay, HF with its lemon...LOL) The crunch panko/cheese topping for the chicken was delicious. It came out perfectly crunchy and flavorful with the Italian seasoning. Potatoes and fry seasoning are a match made in heaven. Love that combo. I wish there was a dipping sauce though, would have been yummy!! Like I said the broccoli was okay, not bad, lemon doesn't make everything better... I thought it was fine! I'd definitely get this again! Seems very easy to recreate as well

Wow! Full of flavor. Cooks on two sheet pans (4 people). And Kid Approved[tm]. My 1st grader, who is not a big eater devoured the chicken and said it was the best and wanted to make this one again. And the roasted broccoli, tossed with butter and lemon juice ---- WOW!!! A flavor blast that I could eat by itself in large quantities by itself. Definitely worth a repeat.

The chicken was tender & juicy, but the crunchy Italian crust...yum! The vegetables were delicious and I loved that it all cooked on on sheet pan! Easy clean up! I did add a piece of parchment paper for an easier clean up!

The star of this recipe was hands down the chicken breasts! Oh my goodness! I learned some new cooking techniques: coating the top of the chicken with a thin layer of sour cream, then placing the panko Italian seasoning, olive oil, and cheese mixture on top, and baking it on high heat close to the heating source allowed it to get wonderfully crispy and flavorful on the top and outside, and succulent, flavorful and moist underneath, on the inside, where the meat was protected from drying out. BRILLIANT! thank you. The potatoes and green beans were fine- but they're beginning to seem like repeated add ons. Still, that doesn't eclipse the delicious success of the Chicken sheet pan bake. Kudos to whoever came up with this! Thank you!

I can never get the coating on the sheet pan chicken recipes here to come out crispy, so maybe that's on me--but also, the potatoes and broccoli were not done even close to the listed cook time.

Wholly cow this was sooo good! I ate too fast so no picture lol. The crust on the chicken was absolutely delicious and I loved the fry seasoning with the potatoes. I put a bit too much lemon on my broccoli, but I also added left over Italian seasoning to it cause I could and though that also helped make this dish!

This was great - the creaminess of the sour cream was amazing next to the crunchy parmesan crust on the chicken. The potato fry sauce was great. I might've added garlic to the lemon and broccoli. Unfortunately, the broccoli I got in the kit was very oxidized by the time I used it (within the week). Maybe send a whole floret so that the broccoli can keep better?

This meal was sooo delicious. The chicken was moist and had so much flavor. The potatoes were perfect. It was the first time we had ever baked our broccoli or put lemon zest or lemon on it. So delicious. Definitely a favorite for our family.
