
If the dad in your life loves a quick, delicious dinner, this grilled salad will be right up his alley. After just a minute or two on a hot grill, lettuce turns smoky and savory without wilting. You’ll chop it and toss the lettuce with a creamy, lemony Caesar dressing before topping it with juicy, lemony grilled chicken and a sprinkle of Parmesan cheese.

Preheat a well-oiled grill to medium heat. (TIP: If using a grill pan, you’ll heat it in Step 2.) Wash and dry produce.
Quarter lemon. Halve lettuce lengthwise, keeping the root intact.

Pat chicken* dry with paper towels; place between two large pieces of plastic wrap. Pound with a mallet or rolling pin until about ½ inch thick. Season all over with Fry Seasoning, salt, and pepper.
Add chicken to grill; grill until cooked through and lightly charred, 3-5 minutes per side (grills can vary). Transfer to a cutting board.
Squeeze one lemon wedge (two wedges for 4 servings) over chicken. Tent chicken with foil to keep warm.
GRILL PAN ALTERNATIVE: Heat a well-oiled grill pan over medium-high heat. Grill chicken as instructed.

Increase heat to high. Add lettuce, cut sides down, to grill; grill, undisturbed, until charred, 30-90 seconds (grills can vary).
Transfer to a cutting board, grilled sides up. (Skip grilling lettuce if using a grill pan—it’ll taste just as great fresh!)

In a small bowl, combine Caesar dressing, garlic powder, and a squeeze of lemon juice.

Once cool enough to handle, trim and discard root end from lettuce; chop into bite-size pieces.
Transfer lettuce to a large bowl. Toss with as much dressing as you like; taste and season with salt and pepper. Add more lemon juice if desired.

Slice chicken crosswise. Lightly crush croutons in their bag.
Divide salad between plates. Top with Parmesan, croutons, and chicken. Serve with any remaining lemon wedges on the side.
Omg so good! I know it's only a simple salad, but it was the best chicken Caesar salad I've ever tasted. I opted for fresh lettuce & pan-fried chicken instead of grilling. Wow, the flavor was amazing! Idk how you've tweaked this simple recipe to be so good, but thank you! We loved it!!
We loved this salad! I was worried it wouldn't be filling enough but they give enough lettuce for two huge plates. I made this on the stove since it was 100 degrees today, didn't feel like grilling. Tip: I precut the chicken breast with shears before cooking. Easier to cook and toss in the salad, instead of waiting for it to cook then cutting up. I hope there are more of these choices for summer.
I don't have a grill so I dipped the chicken in egg, flour, and panko mixed with the fry seasoning. Then fried it in olive oil 3 minutes each side on low with a cover over the skillet. It came out lightly fried and very delicious. It was perfect on top of this salad. Please add this recipe again.

This was okay. Part of me feels a bit silly for expecting something extravagant out of... well... a salad. It was just that- a salad. I enjoyed preparing it as I'd never grilled lettuce before, and it was fairly easy to prepare. I just wasn't amazed, and do think a bit more dressing would've been nice.
Yummy! Might season chicken differently as it didn't really go well with the salad. Also please add more dressing, I want to drown my lettuce.
This was super good and the balance of the salad was just perfect and I really enjoyed this one.
Healthy and yummy. I may pass on the lemon in the dressing next time tho.
