• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄4-inch-thick wedges. Cut tomato into 1⁄4-inch-thick wedges. Trim and quarter cucumber lengthwise into spears. • Toss potatoes on a baking sheet with a large drizzle of oil, half the garlic powder, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes. • In a small bowl, combine cucumber and tomato with a drizzle of olive oil, salt, and pepper. Set aside.

• In a second small bowl, combine sour cream with remaining garlic powder. Add water 1 tsp at a time until mixture reaches a drizzling consistency. Taste and season with salt and pepper. • Halve each falafel lengthwise. • When potatoes have 10 minutes remaining, heat a large dry pan over medium-high heat. Once pan is hot, add a large drizzle of oil. Add falafel and cook until golden and crispy, 2-3 minutes per side. Turn off heat. Transfer to a plate.

• Meanwhile, wrap tortillas in damp paper towels and microwave until warm and pliable, 30-45 seconds. • Lay tortillas out on a clean work surface. Drizzle garlicky white sauce and as much hot sauce as you like over bottom third of each tortilla (be sure to reserve some of both for serving!); top with falafel and cucumber tomato salad. Fold up bottom side of each tortilla over filling, then fold over left and right sides toward the filling. Roll up tortillas, starting with filled sides, to form wraps. TIP: If you like a warmed wrap, seal wraps by cooking seal-side down over medium heat!

• Divide falafel wraps and roasted potatoes between plates. Serve with any remaining garlicky white sauce and any remaining hot sauce on the side.
Pictures on the recipe card do not match the instructions, and the latter aren't always clear. Cut a falafel "lengthwise"? What does that even mean for a round item? Cut the cucumber into "spears" and the tomato into "wedges"? Then why are they in slices in the picture? And the falafel just crumbled when I tried to cut them. Then, the instructions are for making a wrap, but in the picture it's open on both ends, which is not a wrap to me. Fortunately if you've been cooking for years you can make it work, but this kit would completely frustrate a novice.
I used the hot sauce and put it in a small bowl with the garlicky/sour cream mixture and mixed it together! It kept the hot sauce from being so hot all in one bite. This meal was quick and simple to make. My family LOVES the garlicky potato wedges that we air fry with it, included in meal.
As a lover of Middle Eastern food I was very happy with the excellence of this dish and the ease of preparation.

Hello Fresh falafel is really good-it's hard to get good falafel, and I don't like the green stuff-too much cilantro-so this is great. Only problem is, it tends to get crushed under ice packs and crumble. If you could fix that, it would be perfect
This was really good! Small changes I made: warmed tortillas in pan opposed to microwave and seasoned fries with more spices.
I would love to try to make my own falafel. And a comment about the potatoes. I've noticed every time we have potato fries, they never cook according to the instructions. I finally found I have had to dry them of moisture with a paper towel and then cook twice as long in the oven. I have used reg bake, convection bake, and convection roast modes all with varying results. Conv bake seems the most consistent but roast gives great almost fried texture
This is really different and I really like the falafel, but the cucumbers do not last long and I don't tend to cook and eat my meals right as I get them (so I am part to blame). Maybe try to lookout for the cucumbers not lasting or substitute something in for them instead? Maybe I can try to remember if there are cucumbers in the meal I'm ordering and make sure to eat them faster.
Added hummus and these were really good. Just not filling enough. Ended up eating both servings, but that's okay.
