
This speedy stir-fry features savory ground beef, crisp green beans, and scallions—all tossed with ramen noodles in a bold soy chili sauce. It’s finished with a drizzle of sweet and spicy firecracker sauce and a sprinkle of scallion greens for a satisfying meal that’s ready in minutes.

Bring a large pot of salted water to a boil. Wash and dry produce.
Trim green beans if necessary; cut crosswise into 2-inch-long pieces. Trim scallions; cut whites into 1-inch pieces and thinly slice greens. Peel and mince or grate ginger.

In a small bowl, combine mayonnaise, half the chili sauce (you'll use the rest later), and as much Sriracha as you like.
Set aside until ready to serve.

Once water is boiling, add noodles to pot. Cook until tender, 1-2 minutes. Drain and rinse thoroughly under cold water, at least 30 seconds.

While noodles cook, heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add beef*, green beans, scallion whites, ginger, and a pinch of salt and pepper. Cook, breaking up meat into pieces, until beef is cooked through and veggies are tender, 4-6 minutes. (For 4 servings, you may need to work in batches.)
Drain any excess grease from pan (or use a paper towel and tongs to sop it up!).

Add soy sauce, remaining chili sauce, and ¼ cup water (½ cup for 4 servings) to pan with beef and green beans; continue to cook, stirring occasionally, until sauce is warmed through, 30-60 seconds.
Remove from heat.

To pan with beef and green beans, add drained noodles and ½ TBSP butter (1 TBSP for 4 servings). Toss to combine; taste and season with salt and pepper if desired.
Divide stir-fry between shallow bowls. Drizzle with as much firecracker sauce as you like. Top with scallion greens and serve.
We started out a bit disappointed because there was a mix-up with the protein: we expected beef but received pork. That changed things a bit since we were counting on that beefy flavor. Still, we went ahead with the pork and just extended the cooking time to make sure it was well-cooked, as you need to do with pork to avoid any risk. Once we got past that detail, the recipe was actually really easy to prepare. The ingredients were well-measured, and the Firecracker Sauce was absolutely delicious- it gave the dish a spectacular, divine lift. We loved the combination of flavors, even though we know that with beef it would have had a more intense taste. As a suggestion, a bit of toasted chopped peanuts would add a nice crunchy texture and a flavor that fits those Thai-inspired notes perfectly. In short, despite the protein swap, we're giving this recipe five stars without hesitation for its flavors and how easy it was to make. We'll definitely repeat it, it's highly recommended, and it truly exceeded our expectations.
Absolutely delicious... double the ground beef for extra protein and satiating. Ramen is excellent quality! We doubled the firecracker sauce, everyone loves it.
I thought the "firecracker" meant it would be very spicy hot, but while there was strong flavor to it, it wasn't too hot. Good for us. we really enjoyed this one.

Very easy to cook and flavorful. However it is hard to stir up and divide up. The noodles don't really get sauced up. Also I tired of green beans I have to cut the ugly ends off of.
Family enjoyed this but not as much as other stir fry we made from hello fresh. Too many green beans was one issue. The sauce to top off the noodles was delicious and absolutely necessary. This is the first meal out of 7 meals that wasn't a favorite
