
This speedy stir-fry features savory ground beef, crisp green beans, and scallions—all tossed with ramen noodles in a bold soy chili sauce. It’s finished with a drizzle of sweet and spicy firecracker sauce and a sprinkle of scallion greens for a satisfying meal that’s ready in minutes.

Bring a large pot of salted water to a boil. Wash and dry produce.
Trim green beans if necessary; cut crosswise into 2-inch-long pieces. Trim scallions; cut whites into 1-inch pieces and thinly slice greens. Peel and mince or grate ginger.

In a small bowl, combine mayonnaise, half the chili sauce (you'll use the rest later), and as much Sriracha as you like.
Set aside until ready to serve.

Once water is boiling, add noodles to pot. Cook until tender, 1-2 minutes. Drain and rinse thoroughly under cold water, at least 30 seconds.

While noodles cook, heat a drizzle of oil in a large, preferably nonstick, pan over medium-high heat. Add beef*, green beans, scallion whites, ginger, and a pinch of salt and pepper. Cook, breaking up meat into pieces, until beef is cooked through and veggies are tender, 4-6 minutes. (For 4 servings, you may need to work in batches.)
Drain any excess grease from pan (or use a paper towel and tongs to sop it up!).

Add soy sauce, remaining chili sauce, and ¼ cup water (½ cup for 4 servings) to pan with beef and green beans; continue to cook, stirring occasionally, until sauce is warmed through, 30-60 seconds.
Remove from heat.

To pan with beef and green beans, add drained noodles and ½ TBSP butter (1 TBSP for 4 servings). Toss to combine; taste and season with salt and pepper if desired.
Divide stir-fry between shallow bowls. Drizzle with as much firecracker sauce as you like. Top with scallion greens and serve.
I was so excited for this after enjoying the Firecracker meatballs as well as other stir fry dishes, but the ratio of firecracker sauce to noodles was way off (too much sauce to noodle) and made it just taste like mayonnaise noodles. It was a hard one to finish, which almost never happens with these dinners!
Firecracker chicken ramen was a huge hit in my house! My husband stole the leftovers before I could get to them.
The meal was good but the texture of the green beans was a little tough since they didn't get much time to cook/soften.
The firecracker sauce was not too spicy and just right! Added so much flavor to the dish! Could eat this everyday!
I appreciate the large number of Asian inspired noodle recipes. We had not cooked these in the past and is it nice to be introduced to them, with a detailed recipe as a guide.
I think the directions should say to cook the beans longer. Mine were still a bit undercooked even though I cooked them quite a bit longer than the directions advised.
Added bell peppers and onions to better the meal. More fiber.
