Fully Cooked Chicken Breasts

Long Green Pepper

Baby Lettuce
1.5 ounce
Greek Vinaigrette

Mayonnaise
(Contains: Eggs)
1 teaspoon
Garlic Powder
3 tablespoon
Parmesan Cheese

• Wash and dry produce.
• Pat chicken dry with paper towels; dice into ½-inch pieces. Dice tomato into ½-inch pieces. Core, deseed, and dice green pepper into ¼-inch pieces. Trim and discard root end from lettuce; separate leaves.
• In a large bowl, combine vinaigrette, mayonnaise, garlic powder, and a drizzle of olive oil (large drizzle for 4 servings). Season with salt and pepper.
• Add chicken, tomato, and green pepper to bowl with dressing; toss to coat. Taste and season with salt and pepper.
• Divide lettuce leaves between plates and fill with chicken salad. Sprinkle with Parmesan and serve.
This was a first foray into lettuce wraps for me, and if these are any indication, then I've been missing out! The lettuce was perfectly crisp and gave a delightful crunch with each bite. The pepper was hot enough to add just a kick and the tomatoes were a nice touch. The Greek vinaigrette mix was super good, something I'd use on salads on a regular basis honestly. But the chicken. The chicken was spot on. As a self proclaimed chicken snob, I'm always hesitant to order new stuff with chicken in it, because heaven forbid I get a rubbery piece or one with that tendon in it. That will ruin a whole meal for me. But this chicken was perfect, very soft and tender and no suspicious textures. I will be looking forward to this one again. I may even put it in my regular rotation!
While this a good quick recipe, it really isn't "Greek." It's almost identical to the Caesar Lettuce Wraps. To be more Greek, should have used grape tomatoes sliced and assume the feta cheese and the Greek dressing versus just a vinegarette. Also produce needs to be fresher, the green pepper was completed wrinkled and overripe and it was just delivered today.
This was so good I get a lot of these lettuce wraps but to make it easier for me I just create a salad out of it. I put the topping on top of my salad and I'm good to go. Yum Yum
This was another great salad recipe. I am trying to eat more salads and the two I ordered this week were delicious. I like romaine and spinach more than arugula. This also tasted very good on the second day of eating it.
These were so good! My son took the other meal to work (heavy equipment operation) other guys were asking what he had... he called them chicken salad tacos... they were jealous... tastes great working in this heat
Even my teenagers loved the flavor of the chicken salad. Quick dinner after sports.
Could use more tomatoes, we ended up adding more. Still very good, the precooked chicken was so helpful!
The only drawback with this recipe was the huge amount of green pepper that would have been in it if I had followed the recipe exactly. I left it out and put in some cucumber instead and it was delicious!
I hate how much I like this for how simple it is. It's a bit of a waste to take a spot in a weekly box so I'd get this once to find out if you like it and then remake it yourself. I pan fried the chicken a bit to heat it up and to get a little more color on it and I loved it.
Although the lettuce could be used for other purposes, would have been nicer to have a little more of the chicken salad for additional wraps. Cooked chicken was a real plus.
