Wash and dry produce.
In a small bowl, combine honey and mustard.

Place sourdough slices on a clean work surface. Spread half the sourdough slices with as much honey mustard as you’d like; top with turkey slices. Arrange cheddar slices over turkey. Close sandwiches.

Melt 2 TBSP butter (4 TBSP for 4 servings) in a large pan over medium heat. Carefully, add sandwiches; cook, gently, pressing with a spatula or heavy-bottomed pan, until cheese melts and bread is golden, 2-4 minutes per side, adding 1 TBSP butter (2 TBSP for 4) when flipping. (For 4, work in batches, wiping out pan between batches and adding more butter as needed.) TIP: Lower heat if melts begin to brown too quickly.

Meanwhile, in a medium bowl, combine coleslaw mix, mayonnaise, half the vinegar, ½ tsp sugar, salt, and pepper (all the vinegar and 1 tsp sugar for 4 servings). Toss to combine.
Halve sandwiches on a diagonal; divide sandwiches and slaw between plates and serve.
This sandwich was so good. Love how crispy the bread got and the honey Dijon really set off the turkey and cheese!
Pretty basic but, sometimes that's what I want. The coleslaw was a welcome, fresh addition. I did the first sandwich according to the recipe and took the other for work lunch as a cold sandwich. The honey mustard made it!
The flavor of the sandwich was excellent. We sweetened the cole slaw and that tasted great! There were NO POTATOES! Hurrah! I highly recommend this meal.
The sandwiches were easy to assemble and grill and were delicious. The slaw, however, was missing a packet of mayo so we had to add some of our own. After following the directions, the slaw was quite tart. We had to adjust by adding more sugar.
These were so awesome. Perfect! Would have maybe liked a slightly softer bread than this thick, dry sourdough but that's a small note

These were tasty. The only "negative" is it needs a half slice more cheese! I'd like cheese on my whole sandwich, not just 2/3 of it.

Tasted amazing but for 2 sandwiches only sending 2 pieces of cheese is not enough. The bread is really large and there is a lot of turkey so the cheese should be proportionate.
Didn't enjoy the coleslaw side. Would have preferred a different veggie or salad. But the melts were a great portion size and delicious!
