Cooking Steps

1
  • Wash and dry produce.

  • Trim and thinly slice scallions.

  • In a medium bowl, combine coleslaw mix, scallions, gochujang aioli, half the vinegar, ½ tsp sugar, and a pinch of salt (for 4 servings, use all the vinegar, 1 tsp sugar, and a big pinch of salt).

2
  • Heat a drizzle of oil in a large pan over medium-high heat. Add beef* and season with salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, 4-5 minutes.

  • Add as much Korean BBQ sauce as you like and cook, stirring frequently, until glazy, 1-2 minutes more.

3
  • Halve and toast buns.

  • Meanwhile, in a large bowl, toss mixed greens with dressing, salt, and pepper.

4
  • Fill buns with saucy beef and slaw.

  • Divide sloppy joes and salad between plates and serve.
