Bring a large pot of salted water to a boil.
Once water is boiling, add noodles to pot. Cook until tender, 1-2 minutes.
Drain and rinse thoroughly under cold water, at least 30 seconds. (You’ll finish the noodles in Step 3.)
Wash and dry produce.
Trim and thinly slice scallions. Drain and rinse shrimp*; pat dry with paper towels.
Heat sesame oil in a large pan over medium-high heat. Add shrimp, edamame, and half the scallions. Season with salt and pepper. Cook, stirring, until shrimp are opaque and cooked through, 4-6 minutes.
Reduce heat to medium. Add drained noodles and stir-fry sauce to pan with shrimp and stir. Cook, stirring, until sauce is warmed through, 10-20 seconds. Turn off heat.
Stir in coleslaw mix. Season to taste with salt and pepper.

Crush peanuts in their bag.
Divide stir-fry between bowls. Garnish with peanuts, sesame seeds, wonton strips, and remaining scallions. Serve.
