Cooking Steps

1

Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce.

2

Cut sweet potatoes into ½-inch-thick wedges. Toss on a baking sheet with a large drizzle of oil, Southwest Spice Blend, salt, and pepper. Roast on top rack until tender and lightly crisped, 25-30 minutes.

3

Place cream sauce base in a small pot. Bring to a simmer over medium-low heat and cook, whisking, until sauce begins to thicken, about 1 minute. Reduce heat to low and slowly whisk in cheddar cheese. Cook, whisking constantly, until cheese is melted and sauce has thickened. Season with salt and pepper to taste. Remove from heat and cover until ready to serve.

4

Place roasted sweet potatoes on a serving platter; drizzle with as much cheese sauce as you like. Serve with guacamole on the side for dipping.

Review summary

Updated on Dec 2025
  • Flavor: Many loved the unique combo of sweet potatoes, cheese sauce, and guacamole, though some found it an unusual pairing.
  • Ease of prep: Simple to make, but some struggled with cutting hard sweet potatoes or achieving the right crispiness.
  • Suggestions: Consider adding bacon bits, green onions, or extra spices for more flavor; try slicing potatoes thinner for crispier results.
  • Portions: Several felt the sweet potatoes were too small or few for the advertised servings, leaving excess cheese sauce.
  • Texture: Some found the potatoes too soft or mushy; experiment with cooking times for desired crispiness 🍠.

Surprisingly a great snack. HF did it again. Another flavorful, quick, mostly healthy snack. (The cheese but if loving cheese is wrong, I don't want to be right.) They elevated and reimagined nachos and it's a hit.

The sweet potatoes were pretty small and banged up, but loved the flavor! This was such a yummy appetizer.

Only 2 sweet potatoes is not really a lot for this recipe. They were also small. Got about 4-5 wedges each which added to a meal as a side worked but I would not call these nachos or say that it serves 3-4. It barely fed 2.

I'm not a fan of sweet potatoes but the Cheesy Sweet Potato Nachos were actually quite good! The cheese sauce had great flavor and there was plenty of it.

Not 3-4 servings. 1 1/2 servings at best. 2 small sweet potatoes and a crap load of sauce. Labor intensive- a ton of steps for a very small amount. The taste is outstanding. Would not order again.

This a great idea for a healthier way to eat nachos as sweet potatoes.

These were a fun snack. I couldn't get my sweet potatoes crispy enough. Not sure why. They were charred and cooked but still not crispy. Not sure what the secret is. But a fun snack nevertheless.
