Semisweet Chocolate Chips

Rolled Oats
2 teaspoon
Honey
¼ cup
Shredded Coconut

Place peanut butter, honey, and chocolate chips in a large, microwave-safe bowl; cover with plastic wrap. Microwave until peanut butter and chocolate melt, 30-45 seconds; whisk until smooth.
Stir in oats, coconut, and a pinch of salt until evenly combined. Transfer mixture to the refrigerator and chill, uncovered, for 5-10 minutes. TIP: Be careful not to over-chill, or mixture will become too hard to roll!
Once cool enough to handle, roll oat mixture into 8-10 1-inch balls. TIP: To keep the mixture from sticking, lightly oil your hands before starting!
We loved the Chocolate Peanut Butter Oat Balls so much my husband asked me to make them again with ingredients we had on hand. I added flax and pumpkin seeds. Such a great snack!
Taste and convenience is great for prepping a snack for the week. I would say the wet to dry ratio is a little off, as even after cooling the mixture for a while, it was much too loose to form into balls. I added some more oats, probably about 2 more tbsp. This made the mixture much more moldable, but still soft. Still needed about an hour more of chilling before it wasnt super melty.
Easy and yummy snack with chocolate and a little protein. Only negative is how messy your hands and bowl get.
These were great! I will say though, I put in all your ingredients and added some of mine for more excitement! I put in your honey and added the same amount of my HOT HONEY (that honey that's laced with chili peppers) and I added a few shakes of cinnamon. This made them slightly spicy, much sweeter, and with a cinnamon flair! Boy, they were so good! Your recipe made twelve 1-inch bites. My brother came over and ate them all, so I will order more next time.
These are just great! A wonderful option for a quick on the go breakfast or a healthier option for a dessert. So tasty!
Took triple the amount of time to set up. A little hard to roll into balls, but let me tell you, they were meant for after dinner and my son just about ate them all. Such a simple recipe, yet very tasty! Offer a larger or 2 pack. You will want more.
Enjoyed these. Made smaller bites to double quantity and enjoyed as snack around 2 pm. Would like more nice snacks (with protein)

Don't know if I did something wrong or not, but they were just too sticky for picking up. The flavor was good, especially the chocolate. I may or may not order again - depends on how hungry I am when I look at next weeks meals.
