1 teaspoon
Cooking Oil
Drain corn, then pat dry with paper towels. Trim and discard woody bottom ends from asparagus (cut any extra-large asparagus in half lengthwise). Cut asparagus on a diagonal into ½-inch pieces.
Heat a drizzle of oil and 1 teaspoon garlic herb butter in a large pan over medium-high heat. Add asparagus and a pinch of salt and pepper; cook, stirring occasionally, until lightly browned and almost tender, 2-3 minutes. Increase heat to high; add corn and another pinch of salt and pepper. Cook, stirring occasionally, until warmed through and fragrant, 2-3 minutes. (TIP: Cover pan with a lid if corn starts to pop!)
Remove from heat and stir in 3 TBSP garlic herb butter. Season with salt and pepper to taste. Serve.
Recipe Suggestion: Stir in grated Parmesan cheese and chopped parsley for an even more decadent side!
This was a great addition to our meal, we loved the garlic herb butter - it's good on anything - but with the asparagus and corn was phenomenal!
I only used half the corn for this dish & saved the other half for another dish. This was really good! (I also cut down on the butter as it seemed a lot for us.)
Flavor combination was good, but the corn had a coarse texture. Asparagus was nice & fresh. We had this with a ham slab 👍🏻. Quite simple and quick to make after being away all day.
Added some chopped tomatoes and served with pot chops. Great summer dish!
Delicious accompaniment to almost any meal. Thank you. Travel well.
