Mediterranean Crunch Salad Kit

Shrimp

Empty contents of salad kit into a large bowl. Drizzle with as much dressing as you like, then toss to evenly coat.
Rinse shrimp, then pat dry with paper towels and season with salt and pepper. Heat a drizzle of olive oil in a large, preferably nonstick, pan over medium-high heat. Add shrimp and cook, stirring occasionally, until opaque and cooked through, 3-5 minutes.
Divide salad between bowls. Top with shrimp and serve.
Shrimp are fully cooked when internal temperature reaches 145°.
Loved this! Though there were no instructions how to cook and include the shrimp with the salad. I added a light seasoning and salt & pepper to the shrimp and pan-seared them before adding to the salad.
Light yet filling. The salad mix was fresh and the shaved broccoli a nice healthy texture. The shrimp was nice sized and very fresh

I added my own Cajun spice when sauteing the shrimp. The overall salad with them mixed in was excellent.

Shrimp was great and the salad tasted good. But there was way too few salad toppings (definitely not enough feta cheese).
Tons of shrimp! Super simple and yum. Maybe add craisins for a little extra sweet? But I didnt and it was great.
Meal came with no cooking instructions for the shrimp but thankfully I have experience with that so it didn't impact me. I cooked the shrimp in butter and added black pepper and lemon juice for extra flavor. Delicious.

I'm not entirely convinced this is "Mediterranean" flavor... the veg/greens mix was very nice and the pita strips brought some good crunch, but the balsamic was somewhat sweet?? instead of the tang associated with feta & Mediterranean spices. But I did appreciate the simplicity and variety - not just another boring salad - so it was very close to four stars. :))
