
When it comes to celebrating Dad, nothing is im-pasta-ble! Instead of simply serving a pesto pasta salad, we jazzed it up with skewers, fresh grape tomatoes, and creamy fresh mozzarella. Now Dad is free to enjoy this delicious, summery snack with one hand and flip burgers with the other! Just think of the pasta-bilities! *Nutrition values are representative of a 1/4 bundle serving.*

Bring a medium pot of salted water to a boil. Wash and dry produce. Cut mozzarella into ½-inch pieces. Once water is boiling, add tortelloni to pot. Reduce to a low simmer and cook until tender and floating to the top, 3-4 minutes. Drain and rinse with cold water. (TIP: Toss pasta with a drizzle of olive oil to keep from sticking together.) Carefully thread drained tortelloni, grape tomatoes, and mozzarella pieces onto skewers, alternating ingredients (you’ll have more pasta than tomatoes!). Place skewers on a serving platter. Season with pepper and drizzle with as much pesto as you like. Serve with any remaining pesto on the side for dipping.
We ended up using the components of the skewers to instead dress up a couple chicken cutlets we had on hand and were able to create a separate meal on the fly. Used the pesto to brush a little on the chicken after it had been flipped on the grill, and the rest was tossed with the tortelloni along with a little of the pasta boiling water. Instead of cutting the mozzarella in cubes, I cut it into slices and put it on the pesto seasoned chicken on the grill to allow it to melt. Ended up with grilled chicken cutlets with Pesto and melted fresh Mozzarella, served on/with Tortelloni. Turned out great:)
The skewers were cute but I just mixed in altogether as a tortillini pasta salad. I think it would be harder to eat as a skewer with how the pesto was put on top.
The recipe is great, but it would be better for me as a salad or a hot meal. I didn't find the skewers necessary.
I didn't put them on the skewers and just tossed all the ingredients in a bowl for a refreshing summer salad. I did add a fresh cucumber to it too.
Heathy snack and easy to make. I didn't use skewers second time around. I mixed everything in a bowl and still delicious.

The pesto is very good, but I did not like the chunks of cheese. It was too much cheese for me
