• Meanwhile, pat chicken* dry with paper towels; cut crosswise into 1-inch-thick strips. Season with garlic powder, salt, and pepper. Add chicken to bowl with glaze; toss to coat. Cover bowl with plastic wrap and microwave until chicken is warmed through, 90 seconds.

• Meanwhile, in a second small bowl, combine mayonnaise and gochujang.

• Spread cut sides of buns with spicy mayo. Add as many cucumber rounds as you like to bottom buns and top with glazed chicken. Close buns.

I would have liked a bit more of a firm bread because mine fell apart when I sliced it. Also would have liked a bit more ponzu to coat the chicken and maybe a bit more gochu to add a bit more of a kick to the mayo but other than that it was a nice light lunch and easy to make.

I loved this! I added some sweet jalapeno brine and water to the cuke slices for a soak. The gochujang was missing so I added three pepper sauce to the mayo. Delicious!

These were really good! I added black vinegar and sugar to the cucumber and that really kicked it up a notch!! Consider making this a quick pickle.

Not bad! I mixed things up: instead of adding the gochujang to the mayo, I put it on the cucumbers with a bit of sesame oil. Really amps up the flavor.

I enjoyed this sandwich although it was difficult to eat as the chicken kept slipping out of the bun. I did not use the recommended amount of the sauces as they can be too spicy for me but if I make this again I will use more of them because they were not too strong.

The recipe needs more ponzu. The chicken was a bit bland. The mini baguettes we got were bigger than the roll in the picture but the chicken still fit. The spicy mayo wasn't for me but I really enjoyed the cucumbers on the sandwich.

The sandos were good, had a really nice flavor but weren't the easiest to eat the way the recipe said to cut the chicken and the cucumber. Maybe next time I'll slice them lengthwise so they stay on the sandwich while we're eating them.
