Here, chewy ramen noodles are tossed with juicy ground pork in a sauce made from peanut butter, ponzu, and sweet Thai chili sauce for the perfect balance of savory, sweet, and umami in every bite. Bring a large pot of salted water to a boil. Wash and dry produce. Trim ends from cucumbers; shave cucumber lengthwise into thin ribbons using a peeler, rotating as you go. Stop once you get to the seedy core; discard core. Heat a drizzle of oil in a large pan over medium-high heat. Add pork and cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. Season with salt and pepper. Remove pan from heat. Once water is boiling, add ramen to pot. Cook until tender, 1-2 minutes. Drain and rinse under cold water, at least 30 seconds. Return pan with pork to medium heat. Add peanut butter, ponzu, chili sauce, and 2 TBSP water to pan; cook, stirring, until well-combined and sauce is slightly thickened, 30-60 seconds. Remove pan from heat; add drained noodles and toss to coat. Divide noodles between bowls and top with cucumber ribbons. Serve.
RECIPE SUGGESTION Have any rice wine vinegar or limes on hand? Stir in 1-2 teaspoons or a squeeze of lime juice before serving.
This was so delicious! I don't usually choose pork dishes, but I'm glad I ordered this one! I forgot this was 4 servings vs. just 2, but it worked out well; everything is packaged to allow for 2 separate meals. (fyi, this isn't a ramen bowl with broth; it's noodles tossed in a delicious sauce.)
Confused when I found all the ingredients for this meal loose in the box, but everything was there. This meal was very quick to make. We made the cucumber into a spicy asian salad to eat on the side, which was very good and complimented the noodle dish.
This was pretty easy to make and very tasty--when I heat it as leftovers I think I will add a little more sweet thai chili sauce and/or some hot sauce to jazz it up a bit more! And when I get it again I'll have extra cucumbers cause the 2 small ones in the kit weren't enough.
Great combination of flavors and the freshness of the cucumbers were a perfect topping. Could have used more cucumber for quantity of noodles. I added a bit of crushed red pepper
Every single ingredient belonged in there. It was fast, yummy and had the perfect amount of heat. I added just a bit of honey because I'm not as much of a peanut lover as others and it worked really well!
Love the peanut butter in this dish. Would love to see Hot Sauce added as it provided perfect amount of spice to dish when applied
Flavor on this was nice, but it needed to be saucier like the other peanut pork noodle dish. I'm going to try to make a supplemental sauce (peanut butter and Thai chili sauce). This would be a 4/4 and regular order for me if it were saucier. Also, what's with the tiny recipe card with the tiny print? I found that hard to read, and I'm 40, not 80.
I suggest mixing the peanut butter with some of the ramen water so when it's added to the pan with the noodles and meat, you don't bite into a clump of peanut butter.
Easy to make. Needed a bit more spice to calm the peanut flavor but was a very nice meal.
Love this! I wish it was available to add every week! Or - if the noodles were available in the market ;) This is surprisingly simple and loaded with flavor.
